leek & mushroom pie

This leek and mushroom cheesy pie makes not only a wonderful vegetarian meal but is also a bloody decent meal that anyone can eat at any time. Not so long ago, when we were invited to dinner at friends, they would call me in a mild panic and ask what they should cook for The Viking as he’s a vegetarian. Back in the 90’s and 00’s being a non meat-eater was still seen as something that needed to be singled out with a special dish, lovingly prepared by the stressed host as a completely separate thing that had no connection to the meal that everyone else was eating.  I think my older friends and parents generation still have this panic sometimes, it must come from a time when ‘meat and two veg’ was drummed into us as the only option for mealtime but of course that’s simply not true anymore and I think the kids today don’t really seem to care.  A meal is a meal, as long as it tastes good and is filling and nutritious in some way then you’re onto a winner.  However, it’s always good to have options you can pull out of the bag and this light pie is perfect.

It’s midway through September and the weather is doing peculiar things here in the UK.  Just as we should be winding down for autumn, all that comfort food to come; soups, stews and pies and the sun has decided to be glorious all weekend and the temperature has risen to a humid 27.  I cannot wait to stop making salads and start eating pastry.  In the meantime I just got the urge for something cheesy and creamy and thick and filling.  Maybe my body is telling me it’s time to fatten up for the winter or maybe I’m just addicted to cheese. Either way this pie is less pie and more sort of creamy hot pot.  No pastry, just gorgeous crispy potato slices layered on top of the stunning cheesy sauce.  It’s heaven.

leek & mushroom pie

for the pie filing

  • butter and olive oil
  • 200g mushrooms – thickly sliced (i’m using a selection of mixed wild mushrooms and regular closed-cup mushrooms but quite frankly, any mushrooms will do.)
  • 1 medium onion – finely chopped
  • 2 leeks – thickly sliced
  • 5 stalks of tenderstem broccoli – roughly chopped
  • fresh herbs – i’m using rosemary and lemon thyme

for the cheesy sauce

  • 500ml milk
  • 4 tbsp plain flour
  • 50g butter
  • 100g grated strong cheddar

for the topping

  • 200g potatoes – thickly sliced with skin on
  • salt and pepper, olive oil

I’m using a 30cm Falcon oblong deep pie dish but any kind of dish would work here, which i’ve buttered well.

Cut your potatoes into thick slices, I like keeping the skin on and this works fine with new or small potatoes but peel them if they’re whoppers. Bring a pan of water to a gentle boil, then add the potato slices and simmer for 5 mins until par-boiled, then drain well, drizzle with olive oil and season with herbs, place the lid on and shake them about like you would with roast potatoes, then set aside.

In a large pan, melt a little butter and olive oil and saute your mushrooms gently until they are soft and golden.  Just a word on cooking mushrooms – I like a low heat and plenty of butter and olive oil.  I toss the mushrooms to fully coat them in the fat and then gently let them sweat until they begin to squeak in the heat, then I add a lot of freshly milled pepper and a little salt and the fresh herbs, toss them over until they begin to brown.  Once cooked, take them out of the pan and set them aside.

Add a little more butter into the pan (leeks LOVE butter) and thrown in the onions and let them soften but not colour, then throw in the leeks and broccoli and saute them with the onions until soft and tender.  Add the mushrooms and stir them through then set aside whilst you make the cheesy sauce.

Pour the milk into a large saucepan and add 4 tbsp plain flour and 50g butter. Turn the heat to medium and start to whisk the mixture. Keep whisking fast as the butter melts and the mixture comes to the boil – the flour will disappear and the sauce will begin to thicken. Whisk for another 2 mins while the sauce bubbles then stir in 100g grated strong cheddar cheese until melted.

Pour the leek and mushroom mix into the cheese sauce and stir well, then pour the whole lot into your pie dish.

Carefully lay the potatoes on top of the filling in a pattern (or not) of your choosing and bake on 170C for 20 minutes or until the potatoes are gloriously golden.

    This looks like my kind of comfort food, but unfortunately for medical reasons I’m supposed to be on a low carb diet at present, so could only have a little taste of it as a side dish, rather than a satisfying dishful. Do you always make your bechamel sauces the way you describe? I tend to stick to the old-fashioned method of making a roux as taught to me by Sister Baptiste, the cookery teacher at my convent school. I think I’d be left with lumps of flour if I tried your way.

      Thanks for the comment Maria. You know this is the first time i’ve not used the traditional method and I’ve got to say I am a convert,this was just SO easy to do!

    Yum yum – even though we are down under and spring bound – trying to get away from soups and hot stodgy food in general this sounds so mouth wateringly good.

    You don’t need to be a vegetarian to appreciate food like this and it certainly sound like heaven to me!
    We’re also beginning to tire of salad and am looking forward to comfort food again.

Apricot & Strawberry Frangipani Pudding (recipe be Apricot & Strawberry Frangipani Pudding (recipe below)

This pudding is like a bowlful of summer. It’s light and fruity and sweet and so easy to put together.  I think it’s also quite unexpected to serve a pudding when fresh fruit is in abundance and a simple fruit salad would suffice but that’s what I adore about this.  Plus, this pudding makes very good use of those punnet’s of strawberries that look great in the supermarket but in fact taste all spongy and gloopy when you get them home.

Here’s the #recipe:

🍓 200g butter
🍓 200g golden caster sugar
🍓 3 large free-range eggs
🍓 200g ground almonds
🍓 100g strawberries – quartered
🍓 4 apricots – sliced into wedges
🍓 the finely grated zest and juice of half a lemon
🍓 2 tablespoons @fage_uk Greek Yoghurt
🍓 1 teaspoon @little_pod Vanilla Bean Paste

I greased a 20cm fluted ceramic pie dish and pre-heated the oven to 160C

beat the sugar and butter together in a large bowl until light and creamy… a stand mixer will do this in 4 minutes, a hand held electric whisk will do it in 6 minutes and a wooden spoon will do it in 8 minutes.

add the eggs and 1 tablespoon of ground almonds and beat in, then add the rest of the ground almonds and gently beat in, followed by the Greek Yoghurt, lemon zest and juice, vanilla and half the strawberries and beat in – the strawberries will become mush – which is exactly what you want.

lay half the remaining fruit into the bottom of your dish and cover with the frangipane batter, then scatter the remaining fruit on top

bake for 45 mins or until darkly golden brown, then remove from the oven and let it cool to set

Potato Kugel Traybake with Poached Eggs and Mushro Potato Kugel Traybake with Poached Eggs and Mushrooms

Is there anything more ‘Sunday Brunch’ than a crispy rosti with a delicately fragile poached egg on top? This Traybake rosti is a twist on a Jewish potato cake made with potatoes, carrots and onion. It’s amazing and really does make the perfect brunch. 

What are you having for brunch today?

for the kugel:
🍳 5 medium potatoes
🍳 2 large onions
🍳 2 large carrots – roughly grated
🍳 2 eggs – beaten
🍳 2 tablespoons flour
🍳 salt and pepper
🍳 a large handful of fresh rosemary
🍳 2 tablespoons of olive oil

for the poached eggs:
🥚 2 eggs per person
🥚 water
🥚 salt
🥚 a ramekin or similar

pre-heat the oven to 180C and butter your baking tin… i’m using an oblong swiss roll tin but any metal pan will do, a quiche or tarte tin is good.  Earthenware will work too but there’s something about the metal tin that makes it more ‘roasty’

Cut the potatoes and carrots into large chunks and par-boil till just beginning to yeald, drain and place in the fridge for one hour.  I usually do mine the night before.

Once the potatoes and carrots are cold, grate them and add them with the rest if the ingredients to a large bowl and mix together well.

Tip into your cake tin or roasting tray and roast in the oven on 190C till golden and grisp around the edges, roughly 40 mins

To make the poached eggs I prefer to use my large shallow cast-iron casserole dish.  There’s something about the cast-iron that holds the heat and cooks them evenly.  Fill the pan with water and heat it till it’s rapidly boiling, then turn down the heat until it is just steaming. 

Once it’s steadily hot with no bubbles lower the eggs into the hot water and leave them alone at this exact heat.  They should take about 5 minutes to become perfect with soft yolks but feel free to go until you like them.
