Waldorf in a Jar
Welcome back to Salad in a jar and this week we’re making that classic new york salad, The Warldorf.
I’m staring by using another New York icon, the bagel and making some crunchy bagel chips and now its in with the dressing which includes, oil, lemon juice, mustard, greek yoghurt and mayo and then in goes the lettuce, celery, grapes and green apple, followed by walnuts and now we simply repeat the process with more of the dressing and layers of ingredients.
A shimmy and shake later and we can either serve it direct from the jar cocktails style with a side of bagel chips or tipped out into a bowl ready for dipping!
Let me know what salad you’d like to see me make next.
For the bagel chips
- 2 bagels sliced into 4 thin slices – cut a small wedge shape in each bagel
- olive oil
- salt and pepper
Pre-heat the oven to 180C / 356F
Lay the bagels onto a baking tray and drizzle generously with oil on both sides. Season with salt and pepper. Place in the oven and roast for 10 minutes or until golden brown. Watch them like a hawk after 8 minutes or they will burn. Set aside on a wire rack to cool.
For the salad
- olive oil
- the juice on 1 lemon
- 2 teaspoons mustard mustard
- 2 tablespoon greek yogurt
- 2 tablespoons mayonnaise
- salt and pepper
- fresh dill and fresh parsley
- cos lettuce – chopped
- 3 sticks celery – chopped
- 1 fresh green apple – chopped
- 1 bunch grapes – halved
- roughly 70g walnuts – roughly chopped
I’m using a 1 litre glass jar with a rubber seal and lock lid
To the bottom of the jar add 2 tablespoons olive oil, one tablespoon mayo, one teaspoon mustard, half the lemon juice and one tablespoon Greek yogurt. Now a pinch of fresh herbs and salt and pepper.
Add a handful of cos lettuce, then layer up the apple, celery, grapes and walnuts. Then repeat the whole thing, including the dressing ingredients in the middle, until the jar is full.
Close the lid and shake well until it’s all mixed up.
Serve by turning upside down onto a bowl or plate.
