Fruit Salad in a Jar
Welcome back to Salad in a Jar, the picnic packers perfect panty party trick and today we’re making the freshest and most summery fruit salad. I’m starting with lime juice followed by a stunning mango balsamic vinegar and some wonderful pineapple jam, then fresh mint and passion fruit.
We then layer in strawberries, kiwi, pineapple, watermelon, blueberries and grapes and then it’s just a matter of repeating the process until the jar is full.
The salad will then keep in the fridge for up to 24 hours before being shaken to waken, turned upside down and served with a sprinkling of fresh mint.
I’m using this one litre click close glass jar. It makes enough salad for 4 people.
Recipe:
- The juice of one lime
- The juice of one lemon
- The juice of one orange
- 1 tablespoon mango balsamic (or any fruit vinegar)
- 1 tablespoon pineapple jam (or your favourite jam)
- Fresh mint – finely chopped
- Strawberries – halved
- Kiwi fruit – cut into cubes (I leave the skin on)
- Pineapple – peeled and chopped
- Green grapes – halved
- Watermelon – chopped
- Blueberries
Add half of all the juices to the bottom of the jar plus half a tablespoon of balsamic and half a tablespoon of jam. Then layer in the fruit. Once you’ve filled half the jar, repeat the whole process.
Seal the jar and shake well before serving. The salad will keep in the fridge for up to 24 hours.
