Crispy Tortellini with a Tomato & Feta Sauce
There’s a little beach town on the outskirts of Palma in Mallorca called Portixol. It’s quite a chic little place and it’s in one of the lovely restaurant there that we had a bowl of crispy tortellini. It may have been the warm sun and the sound of the waves or it may have been the 2 or 3 Aperol Sprits we’d had but they tasted like little bites of heaven.
They are so simple to make, simply readymade fresh tortellini, tossed in herbs cheese and olive oil and popped into the air fryer!
So here they are, with a stunning tomato, oregano and feta sauce to dip them into!

For the Crispy Tortellini
- 1 x 300g pack of fresh tortellini – I used Spinach and Ricotta
- Olive oil
- 100g parmesan – finely grated
- 1 teaspoon dried oregano
For the Roast Tomato, Oregano and Feta Sauce
- 300g tomatoes – chopped
- 1 teaspoon fresh rosemary leaves – chopped
- 200g feta
- 2 cloves of garlic
- Olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Pre-heat your air fryer to 200C / 390F (same temp for a regular oven.)
Place all the ingredients for the sauce into an ovenproof dish and place them into the air fryer for 10 minutes or the oven for 20 minutes. Once all the veg is soft, set aside to cool. Once cool, spoon it all into a food processor and whizz until fully blended. Pour into a bowl to serve.
Meanwhile, place the tortellini into a bowl, drizzle liberally with olive oil and then sprinkle over the salt and pepper, cheese and herbs. Mix well so the seasoning adheres to the pasta. Place into the air fryer for 8 minutes until golden and crispy. Roughly similar time for a regular oven. Make sure you shimmy them half way through.
