skinny banana and peanut butter muffin tray-bake

… I seem to be forever lamenting about how busy we are at the moment but I do honestly feel i’m neglecting my blog.  I’ve even composed a ‘farewell to blogging’ post because i’m so worried that I won’t have time to blog much over the next few months but I really shouldn’t moan… so do bare with me over the next few days and weeks… i’m still here… I still love you… i’m just full…

skinny banana and peanut butter muffin tray-bake
last weekend was a tray bake-kind of weekend… well, it would have been a muffin kind of weekend but I don’t have a muffin tin here at the London flat… so it was a tray-bake weekend and actually for how incredibly easy this is, the tray-bake just added to the salubrious nature of my Saturday.  You see I knew we had one of those weeks coming up, where i’m unlikely to see the flat, let alone the kitchen so I took advantage of this one spare day to be as lazy as possible.  Spending the day in bed didn’t work out to be the super-relaxing place I wanted it to be but I still went full free-fall into lounging-around and the aroma of these beauties helped no-end… it was like baking aroma-therapy…

inspired by this recipe found on Sally’s Baking Addiction…

2 ripe bananas – mashed
4 tablespoons honey
50g dark brown sugar
120g Total Greek Yoghurt
1 large free-range egg – beaten
4 tablespoons milk
115g peanut butter
220g plain flour
1 teaspoon cinnamon
1 teaspoon baking powder
1 teaspoon vanilla extract
a pinch of salt

preheat the oven to 200C fan and grease and line a tray bake tin

in a bowl beat together the bananas, honey, sugar, yoghurt, egg and milk until combined and frothy, then beat in the peanut butter and vanilla until you have a nicely thick batter

in another bowl whisk together the flour, cinnamon, baking powder and salt, then pour the batter into the flour mix and gently bring together – you don’t want to over beat this now, just gently fold it in until all the flour is combined

pour the batter into the baking tray and bake for 5 mins at 200C and then lower the temp to 170C and bake for a further 10-15 mins or until risen and a skewer inserted comes out clean

set aside to cool before cutting into squares

eat and of course, enjoy!

    My friend, we have been blogging for just about the same amount of time and I know what you mean about being busy, having life changes that lead you in a different direction, etc etc blah blah blah, BUT perhaps what is happening is a 'morph phase'. Perhaps blogging is beginning to become too routine and you are just 'hatching ' the next chapter of Belleau … have another piece of those lovely banana muffin/tray bake squares and let artistic/foodie nature take its course. XO!

    Whatever you do, don't publish that goodbye post!
    It's hard to get your followers back if they think you've given up, but if you post less frequently we'll all understand and still be here when you have more time.

    I know what you mean. I have nearly given up twice now. But those stresses have been quite good for me. It has reminded me that blogging is just a hobby, not a job. Who cares if you miss a month or so? I do it all the time!

    And enjoy being busy, because that doesn't last forever either! Xxx
