treacle pecan loaf – a step-by-step tutorial

9 November 2013 by Dominic Franks

… when the good folk at lizi’s granola contacted me and asked me to make a video of myself making my low-knead granola loaf I jumped at the chance however I hadn’t considered not being able to afford the assistant directors fees and so with The Viking on some kind of union strike I struck out on my own and created this quite natty vintage step-by-step montage… the ingredients below are enough for two loaves – one plain and one filled with lizi’s wonderful treacle and pecan granola… both made using some equally delicious viannos extra virgin olive oil… enjoy!
800g strong white flour
2 x 8g sachet’s of fast action yeast
2 large pinches of salt
a general handful of lizi’s granola
plenty of extra virgin olive oil
600ml tap water
eat and of course, enjoy!

Very nicely done! Great tutorial and the loaves look fab. Do you think you'll do more step-by-step posts in the future?

That bread looks utterly scrumptious and well done for such a fabulous step by step guide, these have brought me to tears before now so I know how labour intensive they are – well done Dom:-)

Oh, you clever baker, you! Great tutorial! I'm going to try shaping loaves the way you do … I always just slap thing down and roll the dough ball around to make the shape I prefer … your folding over/over/end to end must bring some air into the mix! Hmmm!

Love the retro images. Love the look of the finished product. Good rolling and folding – giving that method a go.

Lovely! Fanny was a fan of the pic-strip too, although she always seemed to get her poor abused assistants to do them!

Who needs a video – most detailed step-by-step I've seen and really useful if you haven't a clue what to do. Fabulous.

A brilliant step-by-step, in some ways even better than a video as you can use it as a reference without pausing the video. And a fab recipe

This is such a brilliantly thought out post. It must have taken you ages to get all those pics in a row. Well done!
