Veggie Beetburger

… one of the blessings of making a bundle-full of those beetroot and chocolate cakes over the last week is the excess of beetroot I now have in the house… I love beetroot, it has such an earthy quality that you simply don’t get in any other vegetable… and it’s colour is to dye for….!  …do you see what I did there? hilarious!

… anyhoo, …the humble beetroot whilst wonderful, is not always the easiest thing to utilise in every day cooking so I was totally inspired by this recipe I saw on Jonathan’s amazing blog Around Britain with a Paunch.
I’ve changed his recipe slightly by replacing his 100g of porridge oats with 100g of an interesting soya mix I’ve had hanging around the house since before Christmas… and i’ve added a couple of extra goodies… so the outcome is a bit ‘beefier’ but just as delicious!

Veggie Beetburgers

500g raw beetroot – finely grated and gently squeezed to remove some of the liquid
100g of soya mix (the one I used is called sosmix) or porridge oats
3 eggs
a handful of crushed pine nuts
1 shallot – very finely chopped
1 teaspoon of wholegrain mustard
a glug of olive oil
finely chopped herbs of your choice – i used thyme, dill and rosemary
– begin by mixing all the ingredients in a large bowl… get stuck in with your hands, it feels goooood!.. then place it into the fridge for an hour to amalgamate and soak in those amazing beetroot juices
– form into burger shapes and shallow fry until crispy on the outside, then bake in the oven for a further 15  minutes.
easy, simple, packed with flavour…
…eat and of course, enjoy!

    I'm a big fan of beetroot and like you, I love the earthiness.

    In answer to your question about Fire and Knives event, nope I'm afraid I've not been invited to this one – possibly I'm a bit too low brow to be considered for it!!!!!

    I love eating veggie burgers. The less meat the better. And you're so right – beetroot is sort of hard to use in everyday cooking.

    This looks delicious! I really enjoy veggie burgers, and I've never had a homemade one! As a kid I could not stand beets, (beetroots)! I think it was because they were pickled! It wasn't until my Venezuelan friends mom cooked them, at first I passed, then my friend Jose said “Maria, (that's what he called me)you have to try these” – I was in love with the beet! You've inspired me to make a homemade veggie burger, with beets! Since everything's pink/red they's make a nice Valentine lunch! LOL!! Have a great week!

    This is the second wonderful beetroot recipe I've crossed today! So good to find interesting ways to eat seasonal!

    I, too, am wondering how long it took to get your hands 'de-pinked'!

    @OBaCS – remember this recipe uses raw beetroots… I too cannot stand the pickled variety!

    @Susan… the trick with red hands is to put a little olive oil onto a rag or dish cloth and wipe your hands with this, the oil seems to clean your hands really well (found this out by pure accident…)

    Now that is one fantastic recipe. CT loves beefburgers but doesn't get to eat them very often (or any other meet come to that). He's also not a fan of beetroot, but I am, so you might possibly have come up with a brilliant solution.

    Beetroot curry isn't too bad either.
