roast chicken with beetroot

… it’s a busy week for me this week as we have a big launch for Glenmorangie on Thursday, then I have a brand new supperclub to attend on Friday followed by the fabulous Fire and Knives, Mixed Grill event on Saturday… there will lots to report back on but until then I leave you with this mid-week treat…

… and a final use of all that beetroot, this time with my favourite chicken thighs and drumsticks…

… I’m not even going to bore you with a recipe… quite simply chop your favourite veg into a roasting tin, include 2 large raw beetroot, which you cut up into wedges, season, add fresh herbs and olive oil, sit the chicken portions on top and roast for an hour or so until golden… I added my usual glass of white wine half way through the cooking time which, with the beetroot juices, made the most spectacular deep red gravy… other than that, this is good, old fashioned, simple fabulousness!

… oh and a quick not on peeling veg… don’t bother… they’re about to get roasted to smithereens anyway… and all the goodness is there, right under the skin…

… eat and of course, enjoy!

    You go Tess. Good luck. They're not to everyones taste and remember to buy raw not pickled ( unless you're a fan of pickled stuff)
