Seasons Change Minestrone
I’m finding the summer to autumn transition is so confusing this year, hot days, chilly evenings & I never know what I want to eat.

My delivery has inspired me to make a sort of minestrone. It’s the perfect crossover meal. The flavours of summer with the comfort and warmth of a soup.

ingredients
- 2 tbsp olive oil
- 1 onion – chopped
- 2 carrots – chopped
- ½ aubergine – cubed
- Salt & pepper
- 1 tsp thyme – chopped
- 1 tsp rosemary – chopped
- 1 tsp dried oregano
- 3 cloves garlic – chopped
- handful of runner beans – chopped
- 3 medium tomatoes – chopped
- 1 litre veg stock
- 330g cherry tomato passata
- 1 splash white wine (optional)
- ½ cabbage – chopped
- 50g strong cheddar cheese – finely grated
- 100g brown rice vermicelli – broken
Add the oil, onion, carrots and aubergine to a large pot. Allow the veg to sauté gently for about 8 minutes, stirring regularly. Season with s & p and then stir in the garlic and herbs. Allow the veg to cook for another 5 mins.
Stir in the beans & tomatoes followed by the stock & passata plus a splash of. Allow it to gently plop away on a low heat for 30 mins, then stir in the cheese & cabbage and allow it to cook again for another 30 mins.
Break in the vermicelli & allow it to cook for a few minutes before serving with a slice of bread & butter.
