Upside Down Plum Crumble Cake
Autumn is almost here and for me that means the Victoria Plums are ripe, so I’m thrilled that they’re included in this week’s organic fruit & veg box delivery from on-line grocer Abel & Cole. The box is also packed with other goodies such as their eggs, butter and re-fillable muesli so I’m feeling a cake coming on.
The muesli geos into a crumble which is put into the cake tin first, but it will eventually become the top because… you know me, it just has to be upside down. Then in with the simple cake batter and those luscious plums.

For the crumble:
- 150g cold butter, cut into small cubes
- 100g caster sugar
- 50g demerara sugar
- 150g muesli
- 150g (5½oz) plain flour
For the cake:
- 200g butter
- 200g sugar
- 4 medium eggs
- 200g self-raising flour
- Roughly 8 plums – de-stoned and roughly chopped
You will need a 22cm cake tin, which needs to be greased and lined. Pre-heat the oven to 190°C (170ºC fan/375°F/Gas 5)
Start with the crumble – add all the ingredients to a bowl and rub together with your fingertips. It shouldn’t be too fine, you want it lumpy. Pour this into the bottom of the cake tin and firm down.
For the cake, add the butter and sugar to a mixing bowl and beat well until soft and light – roughly 5 mins in a cake stand. Then add the eggs and flour and beat well until fully combined. Stir in the plums.
Pour the cake batter over the muesli base and pop into the oven to bake for 45 minutes or until the top is darkly golden and firm to touch. Remove from the oven and allow to cool on a wire rack for 30 minutes, then turn it over onto a cake stand, remove the cake tin and paper so reveal the cake.
