Sausage Breakfast Smash on Toasted Sourdough
I think breakfast is perhaps my most favourite meal of the day. Sometimes it’s as fast as grabbing a banana and other times it’s as slow as overnight oats (I don’t know why I said that, I’ve never actually made overnight oats…) Toast, bacon & eggs, pancakes, a bowl of sugar puffs… a full English… or pastries and a coffee, I love them all.
I think maybe it’s because you’ve woken up from hours of literally not eating anything so it’s a treat for your tummy and there’s nothing I love more than a slow Sunday morning with a nice juicy sausage.
This is my sausage breakfast smash on toast and it’s utterly glorious.
Ingredients:
- 4 large sausages (skins removed)
- 100g butter beans (I used these from Bold Bean these from Bold Bean)
- 2 tablespoons tomato passata
- salt and pepper
- Fresh herbs – I used parsley and thyme
- Olive oil
You will also need sourdough bread and eggs.
Place all the ingredients for the smash into a large bowl and smoosh together with a fork. You want some larger bits of beans so don’t go too smooth. Once it’s all combined, set aside.
Cut two thick pieces of sourdough and generously drizzle both sides with olive oil and season well. Place a large frying pan onto a medium heat and pan-fry the bread. You want it golden and crispy on both sides.
Remove the toast from the pan and slather one side of each piece with the raw sausage mix. Place them back into the pan and cook through. I prefer to do this low and slow so turn the heat down and let the sausage meat cool for at least 5 mins until golden and crispy.
Serve with a fried egg on top!
