Lemon and Orange Almond Cake
A little fun in the kitchen with The Viking… perhaps too much fun cos we forgot to add the baking powder but it tasted great and that’s all that matters!
Grease and line a 20cm x 10cm x 7cm loaf tin and pre-heat the oven to 170C / 338F
for the cake
- 225g butter – at room temperature soft
- 225g caster sugar
- 125g self-raising flour
- 125g ground almonds mixed with 2 teaspoons baking powder
- 3 large eggs
- the finely grated zest of one lemon and one orange
- 2 or 3 tablespoons milk
- lemon curd and greek yoghurt for serving
Place the sugar into a bowl and grate the lemon and orange zest on top. Using your fingers, rub the zest into the sugar to release the essential oils. Add the butter and beat well for at least 8 minutes until it creams together and become light and fluffy. – I used an electric whisk but a stand mixer would do the work for you.
Add half the flour and half the ground almonds and 2 eggs and beat again gently until incorporated, then add a tablespoon of lemon juice, 3 tablespoons milk and the remaining flour and ground almonds and final egg and beat it all together.
Pour the batter into your loaf tin and bake for 45 – 50 mins or until golden and risen and a skewer inserted comes out clean
Remove the cake from the oven and allow to cool in the tin on a wire rack. Serve in slices with greek yoghurt and a spoonful of lemon curd.

Cake sounds great. Love anything with ground Almonds……… but, what do I do with the juice and sugar I’ve set aside? Do I pour it over the cake when it comes out of the oven? 😆 Thanks :))

Great cake. Love you two baking together. Why use baking powder if we’re using self ring flour?
there’s a lot of ground almonds in there and that doesn’t have a raising agent.
Dom, I love you – you’re so cheery. Just tried baking the cake but yet to eat!! Yum! That doesn’t mean I’m disciplined, it just means it’s still in the oven. A wee question/comment as I was a bit confused about what to do with the ground almonds as it doesn’t mention them in the instructions. Bunged them in and hoped for the best! Is there a way I could adjust for GF cake? I’m in a bit of a quandary as to a yummy GF dessert for our Thanksgiving feast (they aren’t big pie fans (gasp…what’s wrong with them?..) but this would be a yummy a
Ternative I think.
I just don’t really know much about GF cooking I;m afraid.
