This summer berry ice cream has been inspired by the little jar of Summer Berry Compote that the wonderful gang at Opies sent me to help celebrate the Jubilee. I think that whatever you’re doing to help her maj celebrate on June 2nd, 3rd, 4th and 5th you can’t go wrong by enjoying this wonderfully sweet and extraordinarily simple ice cream.
It’s a real ‘cheats’ ice cream because I use shop-bought custard instead of making my own but it tastes so good you would never know and quite frankly who has the time to faff around with eggs and a bain-marie? I think the shop-bought custard actually adds an ‘old-fashioned’ element to the taste which I simply adore.
I’m using my smeg ice cream churning bowl attachment to make this Jubilee Summer Berry Ice Cream but you can simply freeze the liquid in a plastic container for a couple of hours and it will do just as well.
- 400ml good quality vanilla custard
- 300ml double cream
- 4 tablespoons Opies Summer Berry Compote
Place all the ingredients into a bowl and whisk together for a few minutes until fully combined and gloriously pink.
Pour the mixed liquid into the ice cream mixture and churn for 10 mins or until the ice cream begins to set. Transfer it to a container and store in the freezer until you’re ready to serve!
