…a new Aldi store has opened in Louth and as you can imagine there has been much frenzied action over the past couple of weeks… if i’m entirely honest this is probably only my third visit to an Aldi store and i’m still yet to be convinced.  I’m a firm believer that your visit to the supermarket should be as hassle-free as possible and lets face it, these frenzied, rushed lines are not quite so cheery as the at the local Morrisons and the scrabble for the large discount bins in the centre of the ailes would leave a women’s institute jumble sale organiser in frozen horror.  Also, I want my supermarket to sell everything in one go… after navigating the evils of the giant car park the last thing Iwant to do is have to find another supermarket to buy the rest of the stuff that this one doesn’t sell… you see the other thing that i’ve noticed is that Aldi is not really a cooks best friend.  We bought some stunning clementines and it’s great if you want cheap biscuits and a ‘Christmas pud better than Heston’s’ but I don’t.  I want to bake these things myself and Aldi doesn’t really sell ingredients.  Sure they have flour and the bare essentials and it’s great on washing detergents and fake coke – or fauxca-cola as The Viking calls it – but actual cinnamon sticks.  Forget it.

so I ended up in the local butcher which as you can imagine is a far better place for me to be anyway… now i’m not an expert on cuts of pork – my rabbi would be turning in his grave – so I went in with a gammon on my mind as I wanted to produce a Christmas ham but the butcher was so charming he convinced me to purchase this collar bacon and i’m utterly thrilled with it.  The ginger beer has worked wonders on producing something close to a stunning pulled pork and the cloves, cinnamon and maple syrup make it all so wonderfully christmassy.  The cloves in particular add such a zing I think i’m a little bit addicted!

this is truly a stunning piece of slow-cooked meat and ideal for lazy lunches over the Christmas period… put it in the slow-cooker overnight and by the morning you’ll have the perfect bit of christmas cheer!

1.2kg collar bacon joint
2 x 275ml bottles of Fentimans Traditional Ginger Beer
1 medium onion – sliced
1 carrot – roughly chopped
2 cinnamon sticks
2 cloves
1 teaspoon ground ginger
2 clementines
2 tablespoons maple syrup or honey

place the onion and carrots into the slow cooker and lay the bacon on top, then add the spices, maple syrup and clementines and finally pour over the ginger beer… it should be enough to just cover the bacon but if not, top up with water

place the lid on and cook on low for 7 hours

after 7 hours you can either eat it as is or you can lift it carefully out of the slow-cooker and place it into a roasting tray and blast it in the oven for 15 minutes on 180C so that it goes a nice colour and the fat crisps up a little

it’s amazing served hot with salads or in sandwiches but is just as stunning served cold with pickles, it will last in the fridge for a couple of days, if it makes it to the fridge at all…

    My gosh but that looks so great! I love my slow cooker, bacon/ham/gammon (whatever you want to call it – let's call it “pork”, LOL) and ginger beer. Cloves, however, are the no-footed spawn of the devil and should all be fired into the sun. However, as you recommend them so much, I may be tempted to save a few from my tangerine decorating and bung 'em in with the Fentimans, next time some of said pig hoves into view on my menu plan. Now, you DO know where to send samples of that collar bacon, don't you? 😉

    Lovely idea for adding that winter spice touch to a comforting dish while keeping things nice and simple. I buy some very good things at Lidl or Aldi (I can't really tell the difference) now and then but I'm glad I don't have to rely on them for most shopping.

    Ha ha!!! To be truthful, I am no great fan of cloves but they've mellowed here and the taste was pure Christmas!

    I reckon that with a few minor alterations that dish could be produced West Indian style too. The ginger beer, cinnamon and cloves would be OK; just need to add some fennel seeds, some thyme and some mild curry powder – plus the odd Scotch Bonnet!

    It looks beautiful, I can only imagine how delicious it would be.
    I have only ever set foot in one Aldi and one Lidl and was underwhelmed and confused by the range of goids and the brands. Like you I prefer the “one stop” shopping experience and like it to be a pleasant experience.

    I don't think I've ever had collar bacon but I'll have to ask at my nice, local market to see if they sell it here. Your photo certainly has my mouth watering to try it! We have Aldi's here too. I hadn't stepped foot in one for over seven years and then my German hairdresser told me about the German dark chocolate they sell during the holiday season so I had to visit to get some to try and it was good. I agree, the store leaves me totally underwhelmed.

Apricot & Strawberry Frangipani Pudding (recipe be Apricot & Strawberry Frangipani Pudding (recipe below)

This pudding is like a bowlful of summer. It’s light and fruity and sweet and so easy to put together.  I think it’s also quite unexpected to serve a pudding when fresh fruit is in abundance and a simple fruit salad would suffice but that’s what I adore about this.  Plus, this pudding makes very good use of those punnet’s of strawberries that look great in the supermarket but in fact taste all spongy and gloopy when you get them home.

Here’s the #recipe:

🍓 200g butter
🍓 200g golden caster sugar
🍓 3 large free-range eggs
🍓 200g ground almonds
🍓 100g strawberries – quartered
🍓 4 apricots – sliced into wedges
🍓 the finely grated zest and juice of half a lemon
🍓 2 tablespoons @fage_uk Greek Yoghurt
🍓 1 teaspoon @little_pod Vanilla Bean Paste

I greased a 20cm fluted ceramic pie dish and pre-heated the oven to 160C

beat the sugar and butter together in a large bowl until light and creamy… a stand mixer will do this in 4 minutes, a hand held electric whisk will do it in 6 minutes and a wooden spoon will do it in 8 minutes.

add the eggs and 1 tablespoon of ground almonds and beat in, then add the rest of the ground almonds and gently beat in, followed by the Greek Yoghurt, lemon zest and juice, vanilla and half the strawberries and beat in – the strawberries will become mush – which is exactly what you want.

lay half the remaining fruit into the bottom of your dish and cover with the frangipane batter, then scatter the remaining fruit on top

bake for 45 mins or until darkly golden brown, then remove from the oven and let it cool to set

Potato Kugel Traybake with Poached Eggs and Mushro Potato Kugel Traybake with Poached Eggs and Mushrooms

Is there anything more ‘Sunday Brunch’ than a crispy rosti with a delicately fragile poached egg on top? This Traybake rosti is a twist on a Jewish potato cake made with potatoes, carrots and onion. It’s amazing and really does make the perfect brunch. 

What are you having for brunch today?

for the kugel:
🍳 5 medium potatoes
🍳 2 large onions
🍳 2 large carrots – roughly grated
🍳 2 eggs – beaten
🍳 2 tablespoons flour
🍳 salt and pepper
🍳 a large handful of fresh rosemary
🍳 2 tablespoons of olive oil

for the poached eggs:
🥚 2 eggs per person
🥚 water
🥚 salt
🥚 a ramekin or similar

pre-heat the oven to 180C and butter your baking tin… i’m using an oblong swiss roll tin but any metal pan will do, a quiche or tarte tin is good.  Earthenware will work too but there’s something about the metal tin that makes it more ‘roasty’

Cut the potatoes and carrots into large chunks and par-boil till just beginning to yeald, drain and place in the fridge for one hour.  I usually do mine the night before.

Once the potatoes and carrots are cold, grate them and add them with the rest if the ingredients to a large bowl and mix together well.

Tip into your cake tin or roasting tray and roast in the oven on 190C till golden and grisp around the edges, roughly 40 mins

To make the poached eggs I prefer to use my large shallow cast-iron casserole dish.  There’s something about the cast-iron that holds the heat and cooks them evenly.  Fill the pan with water and heat it till it’s rapidly boiling, then turn down the heat until it is just steaming. 

Once it’s steadily hot with no bubbles lower the eggs into the hot water and leave them alone at this exact heat.  They should take about 5 minutes to become perfect with soft yolks but feel free to go until you like them.
