roast chicken thighs with chorizo

… well I think I can safely say that I am finally back on form and on the road to recovery.  It must be an age thing but the recovery is certainly a lot slower and longer than it used to be and each time it happens it makes me realise how much I need to take care and look after myself.  It’s quite amazing how since I was in my youth the world of nutrition and fitness has changed.  I was never really a very active kind of child.  As a young kid I liked to muck about outside but I much preferred an imaginary world by myself than actually playing sports and even though i’m quite competitive in other aspects of my life it just never translated to teams and anyway it seems different these days with the gym being so much more on the agenda than the classic ‘old-school’ team sports such as football or rugby… it now seems that everyone is obsessed with body shape and the technology of nutrition is a science and I think i’ve sadly missed the boat to actually transform myself now… not that I could be bothered.  Give me a cheese and ham sandwich and a cupcake any day and i’ll watch the race from the sidelines…


roast chicken thighs with chorizo
it’s been such a long time since i’ve blogged about my dear chicken thighs that I thought I ought to bring them back with a bang!  Such a wonderfully versatile and tasty part of the chicken and so inexpensive they are begging to be bought.  The great thing about them that I adore is that, as long as you use the ones with the skin on and the bone in then they’re self-basting as they produce a lot of juicy fats that cook themselves and all the vegetables you cook with them… with the added glory of the cubes of chorizo this was the perfect lazy-day dish to serve for friends with whom id rather spend more time than slaving away in the kitchen… you barely have to do anything except take the glory of the final dish!

6 chicken thighs – bone in and skin on
75g chopped chorizo
2 large carrots – roughly chopped
1 sticks of celery – roughly chopped
1 medium onion – roughly chopped
as many new potatoes as you can eat – halved
fresh herbs and seasoning

you will need a large roasting dish and pre-heat your oven to 160C

place all the prepped veg into the roasting dish, season well with herbs, salt and pepper and then throw the chorizo on top

lay the chicken thighs skin up on top of the veg, season well and cover with foil and roast for 30 mins

remove the foil, turn the chicken thighs over and roast again for 20 mins then turn them back so they are skin side up and roast again for a final 15 to 20 minutes or until they are gloriously golden

    Good old fashioned simple food at it's best Dom. I haven't bought chicken thighs in a while so thank you for reminding me and I might just do this with them as I always have those ingredients to hand! Thanks for entering #CreditCrunchMunch with a fab frugal dish:-)

    Thighs are definitely our favourite chicken cut. Always so moist and juicy, however you do them!
    Love chicken with chorizo too and those potatoes look so crisp and inviting. I can almost taste those salty, herby, crispy chicken skins! Can I come for tea please?

    Love chicken thighs they are so versatile. Chorizo adds that extra burst of flavour. Also good in chilli dishes too.

    Earlier I was watching Nigel Slater being shown how to make “Jewish Penicillin”. That's the stuff to keep you healthy and restore you to health during a convalescence! I wish we had been given that at school rather than the meagre Cabbage Soup they dished up for us…

It’s British Pie Week so I thought a pie with a It’s British Pie Week so I thought a pie with a suitably British filling was most definitely in order and this sausage and mushroom puff pastry pie fits the bill perfectly.  It’s so quick and easy because I’m cheating slightly by using a sheet of ready-made puff pastry but life is short and I’m just not feeling it this week so quick and easy it is.

The filling is so simple, with a thick white wine gravy sauce but it really only takes a few minutes to make. I love these @cauldronfoods vegetarian Lincolnshire sausages.  They’ve got the spices and the texture just right and they brown beautifully which is great for a pie like this.

Jasmine Tea Loaf This cake reminds me of grandma Jasmine Tea Loaf

This cake reminds me of grandma Sylvia who used to always make a tea loaf for tea-time on a Sunday.  She would serve each slice slathered in butter and sometimes even with a slice of cheese on top.  It’s stunning.  It’s packed with fruit and quite dense as it has no butter or fat in the cake, but it’s so tasty and the perfect accompaniment to a cuppa, so put the kettle on.

This is such a simple concept but it tastes so good.  I'm also so glad it turned out OK because I was kind of making it up as I went along. I'm usually quite confident about savoury pasta dishes where I just 'throw things into a pan' but I wasn't quite sure if my concept of blending the sauce ingredients would work.

I'd picked up some wonderful asparagus from the local greengrocer. I simply adore asparagus and usually wait until the British grown stuff comes into season but something tempted me to buy it and I'm so glad I did.  I used my fave Greek Yoghurt by @fage_uk The taste reminds me of warm Spring days and balmy Summer evenings which is exactly the vibe we all need right now.

I do love soft baked eggs nestled into something warm and healthy and this one pot meal is perfect.

banana, espresso, choc-chip traybake with a purely banana, espresso, choc-chip traybake with a purely filthy caramel chocolate and condensed milk icing.

Sometimes only cake will do and I was totally craving something sickly and sweet.  This traybake hits the spot perfectly and although ridiculously ugly to look at (I mean, take your pick between the cake and me) the icing was utterly divine!
