reese's peanut butter cup blondies

… whilst my american friends may believe they have the best candy in the world I think we can all agree that it’s perhaps the europeans who make the best chocolate, however one of the things I love about my visits to the states is a trip to a local supermarket or store where they sell jumbo bags of candy… my favourites are Yorks Peppermint Patties but coming in a very close second would have to be Reese’s Peanut Butter Cups… if you’ve never tried these little beauties they are of course now widely available across the globe but essentially they are a chocolate ‘cupcake’ filled with a slightly salty smooth peanut butter… the chocolate itself isn’t particularly wonderful but the combination of the whole sickly sweet treat is so incredible and just so… american, that I fell in love with them many years back…

this being a food blog I couldn’t just show you pictures of me eating the peanut butter cups… well, I could but that would be an entirely different blog… so i’ve chopped them up into a blondie creating the ultimately easy vessel for consumption… it’s a bit of an odd blondie recipe by Simon Rimmer that I found and adapted from the BBC website, odd because it doesn’t incorporate the chocolate into the mixture but is chopped up at the end, so these are more like sponge fingers with reese’s in it… not that i’m grumbling, they taste fabulous…

225g golden caster sugar
4 free-range eggs
225g butter – melted
150g plain flour
225g reese’s peanut butter cups, chopped

pre-heat the oven to 180C and grease and line a 20cm x 15cm brownie baking tray

place the eggs and sugar into a bowl and whist until light and creamy, then add the butter, a little at a time making sure you fully mix the butter in before adding any more

sieve the flour into the batter and fold in until combined, then carefully fold in the broken bits of chocolate before pouring into you brownie tray and baking on 180C for about 25 mins until golden and risen

even though i’ve eaten them before, many times, I have never cooked with reese’s peanut butter cups so I am entering these blondies into this months ‘new year new ingredient’ we should cocoa bloggers challenge, founded by the wonderful Choclette at Chocolate Log Blog and hosted this month by Linzi at Lancashire Food

    How could you possibly chop up a Peanut Butter Cup? That's sacrilege! I remember a time before they were available here, when they were SUCH a treat to get from a foreign visitor. I haven't eaten one for years, but I did go through a major stage of making Nigella's DIY ones. I'm quite intrigued by the thought of a peppermint patty…

    Oh yum! We love making ice cream and breaking peanut butter cups up and stirring them through … killer! These blondies look the tops!

    Oh yum, I had my first one only last year and despite them being sickly sweet, I could eat a bucketload given a chance. I've not seen them for sale around here though, which is probably lucky for me. Great idea for a blondie. Thanks for entering them into WSC.
