greek yoghurt and spelt loaf

… once again in some kind of vain attempt to control weight i’ve taken to eating bread only at weekends and only stuff I make myself.  I find that this controls my intake of bread quite considerably… I feel better about what I eat and obviously it gives me a chance to mess about with a few different loaves…

for the past couple of years Caroline from Caroline Makes and Ros from The More than Occasional Baker have hosted one of the best bloggers challenges out there, the brilliantly and self-explaingly titled AlphaBakes challenge… having been through nearly the whole alphabet I imagine they’re already planning what to do once they run out but with the dreaded Z still to come they are now on the letter Y which is actually not that difficult with yams… yeast and egg yolk springing to mind… I knew exactly what i’d go for which is yoghurt and in particular a greek yoghurt and spelt loaf that i’ve been keen to make for a while.  The yoghurt works wonders on making the bread so beautifully soft and i’m sure all those natural little creatures helped plump these loaves up to a glorious rise… as always I make two loaves at a time as I really can’t see the point of doing something twice and you have all the ingredients there in the bowl anyway.  We ate one loaf over the weekend and have just tucked into the second loaf this morning and it is still wonderfully fresh and soft… I cannot recommend this tasty loaf high enough

to make two loaves (simply halve the recipe for one loaf)
600g strong white bread flour
200g spelt flour
500ml water
3 tablespoons Total Greek Yoghurt (I used the 0%)
2 teaspoons set honey
1 1/2 teaspoons fast action yeast
2 teaspoons salt

I used my fail-safe low-knead technique once again and was not disappointed… you can see a step-by-step tutorial of this method here.

    What a loaf of beauty! Love spelt in a loaf, or a cake for that matter, adds to the flavour enormously. I too am trying to cut down on my bread consumption, ordinarily eat way too much so tend to only treat myself at the weekends. Might even have to bake a batch of your bread this coming w'end…

    That loaf looks so delectable and the inclusion of yogurt has got to be a good thing. Yogurt is my ingredient for AB too, if I get the time to post it. I'm such a purist when it comes to bread and feel I'm being very bad if I bake anything that isn't 100% wholemeal, but there is something so enticing about white bread, that just, maybe, just occasionally, I could let myself go …

    Excellent looking loaf. I've used yoghurt in breads before but I've never used 0% in case it just didn't work. So thanks for proving (no pun intended) that 0% works in breads.
