prune and chocolate shortbread

… this cold of mine has been lurking around for ages now and I just can’t seem to shake it properly, i’m imbibing plenty of vitamins and eating enough fresh fruit and veg to keep the scurvy away but my nose is still blocked and I feel like I need to plunge my whole body into a giant eucalyptus steam bath… I think it’s an age thing and now that i’m in my late late twenties things like colds just seem to hang around longer, plus i’ve been totally manic at work and haven’t given myself time to recover… so this weekend is all about revival… and chocolate biscuits…

this month two of my favourite bloggers challenges collide with, what is for me perfect alignment… we should cocoa, founded by Choclette from Chocolate log Blog and hosted this month by BakeNQuilt has the theme of cookies and tea time treats, hosted by Karen from Lavender and Lovage has the theme of dried fruits… I made some prune and almond brownies back in the spring that were so delicious that i wanted to recreate that delicious combo here, plus the very kind folk at Rodda’s sent me a bumper pack of their glorious cornish butter and i’m sorry but there is nothing better to taste the sunshine flavour of butter but shortbread…

250g butter
50g dark chocolate
130g golden caster sugar
300g plain flour
roughly 8 prunes – chopped

in a small panย melt the butter and the chocolate very gently and then pour this onto the sugar and mix with a wooden spoon until the sugar begins to dissolve

add the flour and the prunes and stir together – it should come together into a wet dough towards the end

form into a log shape and wrap in clingfilm. Pop it into the fridge for at least an hour to firm up

cut the log into 1cm thick biscuits, lay onto a baking tray lined with baking parchment and bake on 170C for 10-12 minutes then set aside on a wire rack to cool

eat and of course, enjoy!

    The poor old prune seems to get a bad press but it's such a fine ingredient. These sound wonderful and just the thing to cheer up someone with a cold. I don't think they look like burgers, but actually the idea of adding prunes to a burger might not be a bad one. I'm much less sure about the idea of a giant eucalyptus steam bath.

    What a great combo of flavours and ingredients here and you are right only the best butter will do when making shortbread. There is nothing wrong with my eyesight I didn't mistake these biscuits for burgers at all.

    Prunes and chocolate are such a fabulous combination. They worked really well together in last year's mincemeat and I'm determined to repeat the success this year. Your biscuits sound completely delicious and don't look in the least bit like burgers – they look like biscuits I want to eat right now. Thanks for making these for We Should Cocoa ๐Ÿ™‚

    Hope those prunes get the better of your cold.

    Chocolate shortbread is surely the best way to make yourself feel better when you're under the weather…or any other cake or biscuit for that matter! ๐Ÿ™‚ This is a fab little bake…an interesting addition with the prunes too.

    Hope you feel better soon! A chocolate cookie definitely helps. I'd never have thought to use prunes in a cookie but these look great. I'm sure they are healthy too ๐Ÿ™‚
