mint chocolate and granola brownies

… now that we’re back in a proper office with other actual human beings i’ve not only started making my own lunches but i’ve started to bring the odd baked good in to feed the gang and it seems to be going down quite well… well, it’s nice to share isn’t it and it’s nice to get feedback on the baking, regardless of the outcome – although you know me, I probably wouldn’t accept it if someone didn’t like something anyway… and without constant praise I can always cut them off… it also means I have new fans – the lovely Glenn who sits opposite even made my plum and pimm’s crumble the other day and said it was delightful, so it’s a win-win Dom love-in and quite frankly I love it..!

… talking of sharing the love, the good people at thorntons chocolates sent me a very lovely bundle of milk chocolate to have my wicked way with and I think I had a bit too much fun with the chocolate because it seems I ate the stuff I was supposed to giveaway on my blog… ooops… needless to say i’m trying to sorting a second bundle for you good people to squabble over but until I do here’s some gorgeous brownies that the gannets in the office fought over earlier… (see how i’m trying to pass the blame on already…)

the thorntons milk chocolate bundle contained 6 blocks of quite heavenly chocolate that all came in very contemporary square blocks, wrapped in foil and then very colourful card… I was impressed enough with the packaging to be honest so it was very nice that the chocolate was so good too… along with the fruity milk chocolate and strawberry and the spicy milk chocolate, orange and cardamom there was some very nice milk chocolate and mint that I thought would work really well in some simple brownies… I added the granola for a little texture and they’ve worked really well… you can ask the gang here if you don’t believe me!

I used a 12inch x 9inch baking tray – greased and lined
75g chocolate 
150g granola with berries and nuts
150g butter
3 large eggs – beaten
330g demerara sugar
75g plain flour
1 level teaspoon baking powder
1/2 teaspoon salt
prep your baking tin and set the oven to 170C
place everything but the butter and chocolate into a large bowl
in a small pan very gently and slowly melt the butter and chocolate and once melted simply pour onto all the other ingredients and combine then pour into your baking tin and bake for 30 minutes.  Let is cool on a wire rack for 10 minutes before turning it out and cutting into squares

    Oh YES! I do love a goody gooey brownie and I also LOVE Thornton's chocolates too, a good British company. These mint granola brownies look amazing and I could quite happily devour a couple of those in a heartbeat! Karen

    I have been thinking about brownie a lot recently. These look lush. I have a lot of sympathy with you eating the chocolate you were supposed to give away, but you know, if you get another load, just send it to me direct – it'll save you all the trouble of setting up that rafflecopter nonsense.

    Oh my, oh my. No wonder you've won the office over. These look incredibly good, sort of half flapjack, half brownie and that drizzle of chocolate makes them look even more appealing. If I was doing a brownie round-up, you'd be getting star baker for sure.

    Mmmmm yes please! I bet the granola and demerara sugar really gives an interesting, pleasant texture to these gorgeous chocolate delights!

    LOL.. I'm with you, it's always good to have people love the things you make.. and if they don't like you, you have that power to just say, fine, you don't get anymore!! 🙂

    So where exactly is your office Dom? Are visitors welcome? I love taking in goodies to my colleagues too- a recent tin of muesli bars lasted just over two hours!
