manuka honey lemon cake

… the good people at the New Zealand Honey Co recently sent me 3 wonderful new honey products; the thyme honey, which i’m planning to cook with some gorgeous lamb over the weekend… and two incredible manuka honey’s with natural flavourings, one with lemon, the other with root ginger… both additions compliment the natural honey perfectly and as you can imagine taste truly incredible…. the manuka honey with lemon is as good as the best lemon curd you could make, rich and thick and really creamy with quite an intense lemon hit… the manuka honey with root ginger is really special, with little nuggets of ginger that give the honey a hit of underlying warmth that is undeniably good… the mankua honey with lemon was just calling to be baked into a classic lemon cake and who was I to deny the call of the bee…

to be honest this product is so pure the very best you can do with the stuff is spread it onto toast… the three honey’s arrived the weekend my mum came up for her birthday and we basically spent three breakfasts ‘oooing’ and ‘aaaahing’ over the stuff… but i’m not sure honey on toast really counts as a recipe so here’s my cake…

4oz self raising flour (or plain flour and 2 teaspoons baking powder)
2oz ground almonds
pinch of salt
4oz butter – softened
2oz sugar
2oz manuka honey with lemon
2 eggs
1 tablespoon milk
grated rind of one lemon

for the glaze
the juice of one lemon
1 large teaspoon honey

– beat the eggs, sugar and honey until pale and fluffy, add the lemon rind and stir in

– add one egg and beat in, then add half the flour and beat in

– repeat with the remaining egg and flour and all the ground almonds

– add the milk and stir in, then pour into a lined and greased loaf tin

– bake on 170C for 40 mins or until golden

– pull it out of the oven and prick all over with a skewer

– heat the lemon juice and honey in the microwave and then pour the hot liquid over the cake

– allow to cool entirely before removing from the tin and eating

… i’m planning a couple of other interesting recipes to use the honey again so look out for them over the next few weeks… the New Zealand Honey Co honeys can be purchased pretty much all over the world and at ASDA, MORRISONS and Waitrose in the UK

    It would be interesting to see a recipe for honey on toast but I suppose it might lack sustained dramatic interest. This sounds a lovely, classic cake – definitely not a waste of honey. Lamb with thyme honey sounds good too, though…

    What's wrong with a recipe for honey on toast? Assuming you made the bread of course! The honey sounds wonderful – I want some. And the cake sounds even better, I love honey cake.

    All three do sound tantalising – I think the thyme one with lamb sounds wonderful. The cake looks a fabulous bake to show off the lemon honey, though, too. It looks so soft and delicious! 🙂

    The lemon cake sounded so good to me, but then when you mentioned spreading the lemon honey on toast, and little bells started going off in my head…I'd love to try it either way!

    That is a fine looking bake. I'm not the hugest fan of honey but I am sure I could cope with a slice of this cake alongside my cuppa ;0)

    I adore Manukau Honey having grown up with this – I made a polenta cake recently with lemon and ground almonds but never considered using honey. Brilliant idea.

    I am a LONG TERM Manuka honey user…..I take it in tea every day to stave away infections…and LOVE it on toast too! GORGEOUS looking cake Dom!

    These honeys sound delicious – I will look out for them the next time I brave the scrum in my local Morrisons.
    This cake looks fab and I bet it would go down really well at our charity cake stall in November. Thanks for the recipe.

    Oooh the crumb on your cake looks delicious and I really like the sound of the lemon honey in it!

    I will be interested to see how you get on with the thyme one – I was sent a bottle ages back and have not had much success with me, just doesn't work for me unfortunately!

    You whip up the best cakes and desserts. I think I am going to make this cake this week with my honey from the bog close to my house. I also think I might add some of my Lemon Thyme to it. Can't wait!

    It is looking great your cake and so soft.You will get all the benefits of manuka honey eating that cake, and besides that I think that tastes awesome.

Apricot & Strawberry Frangipani Pudding (recipe be Apricot & Strawberry Frangipani Pudding (recipe below)

This pudding is like a bowlful of summer. It’s light and fruity and sweet and so easy to put together.  I think it’s also quite unexpected to serve a pudding when fresh fruit is in abundance and a simple fruit salad would suffice but that’s what I adore about this.  Plus, this pudding makes very good use of those punnet’s of strawberries that look great in the supermarket but in fact taste all spongy and gloopy when you get them home.

Here’s the #recipe:

🍓 200g butter
🍓 200g golden caster sugar
🍓 3 large free-range eggs
🍓 200g ground almonds
🍓 100g strawberries – quartered
🍓 4 apricots – sliced into wedges
🍓 the finely grated zest and juice of half a lemon
🍓 2 tablespoons @fage_uk Greek Yoghurt
🍓 1 teaspoon @little_pod Vanilla Bean Paste

I greased a 20cm fluted ceramic pie dish and pre-heated the oven to 160C

beat the sugar and butter together in a large bowl until light and creamy… a stand mixer will do this in 4 minutes, a hand held electric whisk will do it in 6 minutes and a wooden spoon will do it in 8 minutes.

add the eggs and 1 tablespoon of ground almonds and beat in, then add the rest of the ground almonds and gently beat in, followed by the Greek Yoghurt, lemon zest and juice, vanilla and half the strawberries and beat in – the strawberries will become mush – which is exactly what you want.

lay half the remaining fruit into the bottom of your dish and cover with the frangipane batter, then scatter the remaining fruit on top

bake for 45 mins or until darkly golden brown, then remove from the oven and let it cool to set

Potato Kugel Traybake with Poached Eggs and Mushro Potato Kugel Traybake with Poached Eggs and Mushrooms

Is there anything more ‘Sunday Brunch’ than a crispy rosti with a delicately fragile poached egg on top? This Traybake rosti is a twist on a Jewish potato cake made with potatoes, carrots and onion. It’s amazing and really does make the perfect brunch. 

What are you having for brunch today?

for the kugel:
🍳 5 medium potatoes
🍳 2 large onions
🍳 2 large carrots – roughly grated
🍳 2 eggs – beaten
🍳 2 tablespoons flour
🍳 salt and pepper
🍳 a large handful of fresh rosemary
🍳 2 tablespoons of olive oil

for the poached eggs:
🥚 2 eggs per person
🥚 water
🥚 salt
🥚 a ramekin or similar

pre-heat the oven to 180C and butter your baking tin… i’m using an oblong swiss roll tin but any metal pan will do, a quiche or tarte tin is good.  Earthenware will work too but there’s something about the metal tin that makes it more ‘roasty’

Cut the potatoes and carrots into large chunks and par-boil till just beginning to yeald, drain and place in the fridge for one hour.  I usually do mine the night before.

Once the potatoes and carrots are cold, grate them and add them with the rest if the ingredients to a large bowl and mix together well.

Tip into your cake tin or roasting tray and roast in the oven on 190C till golden and grisp around the edges, roughly 40 mins

To make the poached eggs I prefer to use my large shallow cast-iron casserole dish.  There’s something about the cast-iron that holds the heat and cooks them evenly.  Fill the pan with water and heat it till it’s rapidly boiling, then turn down the heat until it is just steaming. 

Once it’s steadily hot with no bubbles lower the eggs into the hot water and leave them alone at this exact heat.  They should take about 5 minutes to become perfect with soft yolks but feel free to go until you like them.
