baked egg and tomato and fig jam galette

… we’re known to obsess over the weather us Brits but as many of my UK friends will testify to it’s becoming very hard to see the light-side. We don’t seem to get a break and it’s not as if it’s just a bit of drizzle, we’re talking about an average months worth of rainfall in 24 hours… the people in charge are calling this the ‘European Monsoon’ and if you regard the weather maps you can see what they’re talking about… a cyclonic shaped weather front hovering over the isles… and we’re told it’s not going anywhere until at least September by which point it’ll be autumn and… well what’s the point then eh… and it’s becoming serious… peoples homes and businesses are flooded… events are being cancelled… and most importantly, barbecues are not being lit!

… how are we supposed to survive the ‘summer’ without the heady fug of burnt meat over smokey charcoal wafting down the streets and through the neighbourhoods of this fair country?

… the irony is that this is an event-heavy year for us in the UK… we had the Jubilee, which was a wash-out for most… i’m sure you’ve all seen pictures of HRM forcing a smile through the raindrops… and then we have the olympics.. which we’re all supposed to be deliriously happy about… so happy in-fact that the government are telling us not to go abroad this summer but stay at home instead and support team GB… in the rain… oh and tickets for the games are a snip at £695… I think you’ll find that £695 will get you to Miami… or Tunisia… or Mallorca (twice)… or Egypt… or Greece… oh the sunshine!!!

this uses up the last of the tomato, red pepper and fig chilli jam I made a couple of weeks ago… it bakes beautifully on top of ready-made puff pastry, making this the easiest, fastest and tastiest fancy lunch you’ll ever eat…

… so much so that I’m not going to patronise you with a recipe… all I need to tell you is to make sure you leave a nice boarder around the jam and then don’t crack the egg into the galette until about 5 minutes into the baking time so that you create a little ledge to stop the egg running out… which will happen anyway as seen in the pictures above…

… and now i’m off to the sun myself (the sun!) for a few days with a last-minute and well deserved trip to Mallorca… it may be a little quiet from me for the next few days but I promise to be back next week with some lovely Spanish inspired recipes…

… eat and of course, enjoy!

    Oh Dom, how I wish you and I could seriously trade weather fronts. You can have the sun and the 112 degree temps that come with it… I'll take that rain – we need rain!! At least you get a little break…enjoy your trip to Mallorca!

    In current weather conditions we certainly need some Comfort Food like your galettes to take our minds off our plight and remind us of all those holidays in the sun that we have experienced in the past.
    I'm thinking now of buckwheat “Sarrasins” (pancake sort of things, which I have eaten in the south of France), filled with ham, egga nd cheese…) 🙂

    First of all, so sorry about your weather, but I will say that we have the opposite problem here, no rain, ever. Just relentless blue skies and warmth. Believe it or not, that can get very monotonous. I yearn for some blustery weather!
    And I can't wait to hear about Spain, that's my foodie obsession du jour!

    It looks and sounds delicious, Dom. And here in the US, it's been blisteringly hot – every day it seems to climb hotter and more humid. I'm really looking forward to watching the Olympics, but at prices like those, I don't think I'd ever be attending in person 🙁

    I know what you mean about the weather. We have had our fair share of flooding this year too. This past week has been nothing but rain and with house guests from the UK its not good for the tourist (people think it is sunny in Australia all the time). Its is winter here though and we hope the catchment dams are filling nicely in readiness for the onslaught of water restrictions in the summer months – it doesn't always work out that way. Don't know that I could wait for lunch before tucking into this galette looks more like brekky to me!

    I think the rain has gotten to you . . . wish we could have some of your rain. It's been crazy hot in the USA! Last week we had 45 states with temps at 90 or above! Then Colorado was devastated with wild fires! Thankfully we were in Maine and will be for most of the summer, it was about 85 most of the week, but the temps drop like a rock at night to 68!

    I really hope you get some sunshine soon, and I hope your Olympics are a huge success! Pricey though eh?

    Enjoy Spain! I'm looking forward to some fabulous photos and recipes!

    Now on to the recipe! Looks fabulous!

    The weather is pretty depressing when it's supposed to be a celebration I know… oh, well…
    The baked egg tarts look so beautiful Dom! and I have no doubt it tastes delicious too.

    I love baked eggs in any way shape or form. I haven't been able to find self rising flour for my Victoria Sponge. The grocery man said the flour sells like hot cakes down south because of all the biscuits they eat. He will however order a couple of bags for the store. I just have to wait for it to come in. Bummer!

    oh Dom! my friends and I were just bitching about the weather too. It really has been a washout this summer hasn't it. how I wish I could be in Spain now too 🙁 I love baked eggs and this is briliant doing it over a galette, with fig jam at that!
