small pleasures

… i’m feeling thoroughly fed up and totally un-inspired…

I know it happens to the best of us, particularly during these winter months but i’ve got a real funk on… I’m staying out of my wonderful kitchen as much as possible…I don’t even feel like cooking… i know, I can’t believe I’ve actually written those words either…!

… I go to bed every night with that dreadful Sunday night feeling and I can’t seem to shake the mood of impending doom… I know I sound frightfully dramatic but i’m finding it hard to be enthusiastic about it all… I know it will pass and I do have some exciting stuff to look forward to this year… i’m just in some need for inspiration and i’m not finding it in the pages of my cook books…

… this morning The Viking suggested I make myself bacon and eggs to cheer me up… and it’s always the small pleasures that give us a lift don’t they? As you can see by the picture, i’m going for a carb-free diet at the moment and for this reason i’m also entering this post into this month’s Breakfast Club.  Founded by the wonderful Helen over at Fuss Free Flavours and hosted this month by Food Je t’Aimee the theme is January Detox.

I realise that this doesn’t seem particularly detoxifying but believe me this is detox for the soul…

Folded Eggs and Baked Bacon
i’m not going to be impertanent enough to teach you how to suck eggs… or scramble eggs… but may I explain my method for folded eggs and baked bacon…

to feed 2 hungry mouths:

5 eggs
a splash of milk
a large knob of butter
6 rashers of streaky bacon

– start with the bacon as this will take the longest…

– pre-heat the oven to 160C and line an oven proof dish with foil

– lay your bacon strips into the dish and bake for 10-15 minutes or until nice and crispy

– my rule for eggs is 2 per person plus one if there’s more than one of you

– break the eggs into a large bowl, add a dash of milk and beat with a fork until bubbly

– put the heat on high, take a large heavy bottomed frying pan, add the butter and teeny drop of olive oil and once it melted add the beaten egg mix

– let it sit in the pan for a moment or two… it needs to catch, a little like an omelet.

– take a wide spatula and gently push the egg mix from the edges into the middle, again like you would with an omelet but let it tear as you push, almost folding the eggs as you do it.  Work your way around the pan and very soon the eggs should begin to solidify.  I like mine still slightly soft but keep going for as long as you like… the eggs should be soft and light and beautiful…

… i’m already slightly more inspired…

    Yep, sounds OK to me – though I'd probably need some toast, and a maybe a slice of Black Pudding…
    Nothing's worse than hard scrambled eggs – they go so rubbery!

    I feel the January blues kicking in too…..haven't put anything on my blog since Xmas. Must get to it, so maybe I'll start the weekend off with your folded eggs to get me inspired again :-0x

    Scrambled egg with crispy bacon is one of my all-time favourites for breakfast or lunch. It's good with mushrooms too. Comfort food is what we all need at this time of year – to help us face the horrible months of winter – Jan and Feb.

    I make cheesey scrambled egg for my dog Lulu most mornings – served with an oatcake. Sometimes I even have some myself !!

    Unfortunately, I go for the carbs when I'm in the funk …

    Glad to know Im not the only one feeling uninspired! I sat at my computer for ages yesterday thinking of 'exciting' new things to make but nada! This looks great and I am definitely going to make a huge big brunch this weekend but I definitely don't have the discipline to go without the carbs!!

    streaky bacon is a MUST! I know what you mean about being in a funk…must have something to do with all the hype and overindulgence of the holidays…i'm starting to get back into the kitchen the past few days…soups and stews for us! oh and bread of course 🙂

    Crikey Dom, I've been feeling the same way today – really down in the dumps! This looks gorgeous though, I wish I had some bacon in the fridge – detox for the soul, indeed 🙂

    Glad you found some inspiration in your breakfast. Isn't that what it's all about? I hope the inspiration lasts and carries you through the week! I like your folding technique, too, and will definitely be giving it a try.

    Maybe your funk is do to not eating carbs. I know you love your bread, just a thought. Bacon and eggs always makes us smile over here. Sometimes I brush a little maple syrup over the bacon while its in the oven. Thanks for the tip on the eggs.
