Banana, Walnut and White Chocolate Loaf – We Should Cocoa

…you probably think I’ve got some kind of banana loaf fetish, which I do… but I hate to see a banana go to waste and anyway work with me here… banana is a fruit… walnut’s are full of vitamins and protein… a loaf is NOT a cake… this surely equals a healthy snack right..? okay, so the added chocolate may be a little off the scale but it’s not my fault… for that the blame lays squarely at Chele from Chocolate Teapot‘s feet… oh and her cunning partner in crime Choclette from Chocolate Log Blog… evil twins that they are made me do it….

… the theme for this months we should cocoa challenge is health… I suppose it’s Chele’s idea of being cruel to be kind… whatever it is and however I kid myself about this banana loaf being healthy The Viking and I devoured it in one sitting, which I’m not sure counts as portion control let alone healthy eating… ah well, it was damn fine which really is the point isn’t it?

Banana, Walnut and White Chocolate Loaf
if you get a chance to refrigerate this loaf for 24 hours before you eat it you will enjoy a denser, moister loaf

8oz self raising flour
4oz butter
4oz brown sugar

2 ripe bananas – mashed
2 large eggs – beaten
2 oz chopped walnuts
100g white chocolate -chopped into chunks


– in a large bowl, mix the flour butter and sugar into breadcrumbs 

– add the bananas, eggs, walnuts and chocolate and mix together

– pour into a loaf tin and bake in the oven for 45 mins at 170c



eat and of course, enjoy!

    Chocolate is made from cocoa beans; beans are vegetables – therefore chocolate must count towards your Five A Day!

    I was planning a banana and chocolate loaf too but had to wait for my oven to be fixed! I think this definitely counts as healthy!

    Yup, cocoa is derived from beans, and therefore it HAS to be part of the 5-a-day!! LOVELY looking banana loaf, and like you, I hate waste, so this is a brilliant idea for using those old bananas up…looks amazing!

    It sounds very tasty, as well as healthy.

    CHOCOLATE is healthy, but white chocolate isn't chocolate, is it? 😉

    Did you butter the slices before eating? LOL!

    I hear those words 'fruit portion', healthy and 'portion control' but I think 'fetish' is probably nearer the mark! Banana and white chocolate sounds like an excellent combination, you loaf looks very delicious.

    This Banana Loaf sounds insanely good, the white chocolate and walnuts is a brilliant idea.

    I would never have thought about putting white chocolate in the banana loaf and that's exactly why your a good baker. Nice idea!

    I have used white chocolate for the last few We Should Cocoa challenges.

    It definately is chocolate as it contains cocoa butter, but also has to contain some diary too. I only know this as I went to a tasting and asked lots of difficult questions!

    Well done on getting the challenge done so fast. I know what I'll be making – just need to do so.

    Lovely cake – oh sorry, I mean loaf. I'm not absolutely sure about the health bit but I'll definitely remember that a loaf is not a cake.

    Haha! Well it would have been healthy if someone had 'exercised' (pun intended lol) portion control! Love this recipe though and I am going to pinch it to use up the banana's in my fruit bowl. Thanks for taking part in the fun again this month.

    Didn't sound as though this loaf got the chance to sit in the fridge for 5 minutes never mind 24 hours.

    Anyway cocoa butter, walnuts and bananas are healthy, so getting loads of them at one sitting has got to be a good thing – no? And this evil reputation seems to be following me around – think I quite like it 😉
