Creamy Vegetable Curry – a random recipe

it’s odd that I don’t make more curry… I have, in this last year made more curry than ever before but it is still amazing that it’s not regularly on my list of things to cook as I completely love it… not only does it taste so good and so much better than anything shop or take-away bought but, after you have all the essential ingredients in your store cupboard, which then seem to last forever, it is so easy to do… no more complicated than a stew in fact but packs far more of a punch!… plus it’s so thoroughly un-Christmas I find it a perfect antidote to the cloying sweetness of what’s to come…

… plus I was recently fortunate enough to bag myself a jar of this incredibly hot Sweet and Hot Lemon Pickle made by the lovely Kavey from Kavey Eats… (well I think it’s actually made by her Mamta, which who i’m sure is just as lovely) which i’ve used in place of the Mango Chutney called for in the recipe.

… this is my entry for this months Random Recipes and true to my word I took this cookbook down to the charity shop, along with some other, never-used books and the dear old lady was very pleased to receive them… I left with a lovely feeling of charity, knowing that whomever bought this book would be slimmer and more practical because of it…

Creamy Vegetable Curry – page 136 of Practical Low Fat (available in the Louth branch of the British Heart Foundation…)


2 tbsp sunflower oil
1 onion – sliced
2 tsp cumin seeds
2 tbsp ground coriander
1 tsp ground turmeric
2 tsp ground ginger – I used fresh, grated
1 tsp chopped fresh red chilli
2 garlic cloves – finely crushed
400g tinned chopped tomatoes
1 tin of coconut milk
1 small cauliflower – broken into florets
2 carrots – sliced
1 potato – diced
1 tin of chickpeas
150ml thick natural yoghurt – I used 2 tbsp cream cheese
2 tbsp mango chutney
3 tbsp chopped fresh coriander

– heat the oil in a heavy pan and fry the onions until soft, then add all the spices, garlic and ginger and fry for a further minute

– add the tomatoes and coconut mil and stir well

– add the veg then cover and simmer for at least 20 minutes

– add the yoghurt or cream cheese

serve with whatever takes your fancy, eat and of course, enjoy!

    The joy of curries is that there are so many variations. A bit like stews . . .doh! I think people are put off by them because they think they take hours to cook . . . and clearly some are better the day after. But a speedy veg curry is a thing of beauty. (I'd add some hard boiled eggs too!)

    Funny must have been on the same wave length just finished a great lentil curry made by my son-in-law, will have to pass this great little recipe on to him so he can make it for me!! I love men who cook.

    Nope, I made the pickle all by myself, but using a recipe from mum's site, Mamta's Kitchen! 🙂

    Dom; do you make your own curry powder sometimes? If not, you should – it is so much better than anything you can buy, and you can adjust the recipe to suit your tastes (and it makes the house smell lovely for several days afterwards!)

    I am a curry fiend and this looks great Dom! I have given a few cookbooks away as it happens, but not the one that I made my RR from! I am now all set to receive some new ones….hopefully from Santa if I have been good!

    I'd love to go buy your donated cookbook, but it would be a bit costly for me given that I live in the US of A. On the other hand, I don't use my curry, hardly ever. Why? Who knows.

    Oooo yum! that looks delicious!
    I love veg curry made with coconut milk – always put a few sprouts in ours 😉 got the idea from Ranis restaurant, OH's favourite eating place when we met.

    Ah, I bet it's not still in the Louth branch of the British Heart Foundation any more! Curries are so perfect at this time of year – it's the combination of the easiness in the run up to Christmas, the spices to clear the pies, and the cosy warmth. Had it 3 times last week (2 x homemade, 1 x naughty takeaway).

    Mmm! I love cauliflower with curry! It's funny. I always had cauliflower in that bland cream sauce growing up (sorry, Mom!), but the more I look around the more I find awesome recipes that do so much more with it! Yours included!

    And I love the idea of making my own curry powder, but lack the imagination to settle on measurements and the exact spices!

    I so love the laides who help out in the charity shops ….. my son is helping out in our local Oxfam at the moment (the old ladies love him!!!) and they call themselves “the lovlies”!!!

    I adore curries.. I even made a tilapia curry just a few days ago. I will admit, though, I've never had a vegetable curry… it looks and sounds delicious!

    Love curry, love coconut milk – will be making something very similar tomorrow.

    Oh Dom, this is really bad, but time is running out and I don't know if I'm going to manage to enter RR again this month – just too much sorting out of the big C word to do without sorting through all my books too. Haven't quite given up, but suspect I might not make it 🙁

    Looks tasty – a winter warmer for when the weather's horrid. That said, I think your cookbook shelf is possibly breathing a sigh of relief now that Practical Low Fat has gone… And I'm sure there's some sort of appropriateness in donating a low fat cook book to the Heart Foundation!

Apricot & Strawberry Frangipani Pudding (recipe be Apricot & Strawberry Frangipani Pudding (recipe below)

This pudding is like a bowlful of summer. It’s light and fruity and sweet and so easy to put together.  I think it’s also quite unexpected to serve a pudding when fresh fruit is in abundance and a simple fruit salad would suffice but that’s what I adore about this.  Plus, this pudding makes very good use of those punnet’s of strawberries that look great in the supermarket but in fact taste all spongy and gloopy when you get them home.

Here’s the #recipe:

🍓 200g butter
🍓 200g golden caster sugar
🍓 3 large free-range eggs
🍓 200g ground almonds
🍓 100g strawberries – quartered
🍓 4 apricots – sliced into wedges
🍓 the finely grated zest and juice of half a lemon
🍓 2 tablespoons @fage_uk Greek Yoghurt
🍓 1 teaspoon @little_pod Vanilla Bean Paste

I greased a 20cm fluted ceramic pie dish and pre-heated the oven to 160C

beat the sugar and butter together in a large bowl until light and creamy… a stand mixer will do this in 4 minutes, a hand held electric whisk will do it in 6 minutes and a wooden spoon will do it in 8 minutes.

add the eggs and 1 tablespoon of ground almonds and beat in, then add the rest of the ground almonds and gently beat in, followed by the Greek Yoghurt, lemon zest and juice, vanilla and half the strawberries and beat in – the strawberries will become mush – which is exactly what you want.

lay half the remaining fruit into the bottom of your dish and cover with the frangipane batter, then scatter the remaining fruit on top

bake for 45 mins or until darkly golden brown, then remove from the oven and let it cool to set

Potato Kugel Traybake with Poached Eggs and Mushro Potato Kugel Traybake with Poached Eggs and Mushrooms

Is there anything more ‘Sunday Brunch’ than a crispy rosti with a delicately fragile poached egg on top? This Traybake rosti is a twist on a Jewish potato cake made with potatoes, carrots and onion. It’s amazing and really does make the perfect brunch. 

What are you having for brunch today?

for the kugel:
🍳 5 medium potatoes
🍳 2 large onions
🍳 2 large carrots – roughly grated
🍳 2 eggs – beaten
🍳 2 tablespoons flour
🍳 salt and pepper
🍳 a large handful of fresh rosemary
🍳 2 tablespoons of olive oil

for the poached eggs:
🥚 2 eggs per person
🥚 water
🥚 salt
🥚 a ramekin or similar

pre-heat the oven to 180C and butter your baking tin… i’m using an oblong swiss roll tin but any metal pan will do, a quiche or tarte tin is good.  Earthenware will work too but there’s something about the metal tin that makes it more ‘roasty’

Cut the potatoes and carrots into large chunks and par-boil till just beginning to yeald, drain and place in the fridge for one hour.  I usually do mine the night before.

Once the potatoes and carrots are cold, grate them and add them with the rest if the ingredients to a large bowl and mix together well.

Tip into your cake tin or roasting tray and roast in the oven on 190C till golden and grisp around the edges, roughly 40 mins

To make the poached eggs I prefer to use my large shallow cast-iron casserole dish.  There’s something about the cast-iron that holds the heat and cooks them evenly.  Fill the pan with water and heat it till it’s rapidly boiling, then turn down the heat until it is just steaming. 

Once it’s steadily hot with no bubbles lower the eggs into the hot water and leave them alone at this exact heat.  They should take about 5 minutes to become perfect with soft yolks but feel free to go until you like them.
