our daily bread

29 September 2011 by Dominic Franks

… i’m trying to eat as much home-made bread as possible… maybe I should rephrase that for fear of you thinking that i’m trying to eat as much home-made bread as possible… I want to stop buying store-bought bread and only eat home-made… but this means I need to start getting a bit more adventurous with my loaf.

… I am starting with some basics, I pretty much have my white farmhouse loaf down pat and i’ve moved on here to this mixed seed wholegrain loaf, which is exactly the same recipe but replacing two thirds of the white flour with this lovely wholegrain flour… it came out perfect and I feel good eating it with my breakfast… i’m adapting recipes that call for sugar with the equivalent in honey and using olive oil instead of butter.. and if recipes call for water, I use half water, half skimmed milk, it seems to make the loaf really soft inside…

… I plan to get each loaf perfect, or my idea of perfect anyway and then, over the next few weeks, move on to more complicated and exotic breads… so if you have any suggestions then please feel free to recommend or link me up to recipes…

… oh and I will, at some point, think about growing a new sourdough… I just hate the thought of replacing poor dear Lucretia…

eat and of course, enjoy!

Funny that cultures always get named. My mother-in-law's cake culture is called Hermann. No idea why.

Nice loaf btw. So much better in every sense.

I think that is a fantastic idea! Homemade bread is so much better… plus, you get to enjoy that wonderful smell in the house as it bakes!!

I baked a batch of 8 loaves yesterday. They can stand freezing very well, so that is what I usually do with 6 of them.
Been making bread for 15 years now and if I have to buy some from time to time, it is such a let down.
BTW I've already eaten half a loaf of 'seedy' bread today. Seedy as in wholemeal with added poppy, sesame, sunflower and pumpkin seeds. ๐Ÿ™‚

    That looks marvellous Dom!

I'd be far too dangerous if I baked my own bread regularly though, I'm really not to be trusted!

GOOD looking loaf Dom and the texture looks spot on. Bet it was great with a hunk of cheese and even better toasted next day.

I can almost taste that bread. Looks delicious. Have you got THIS book? I have found it to be excellent.

This bread looks delicious. That's my one problem with home baked bread it's so wonderful I always end up eating it! I admire your willpower, it would simply disappear if I was near!

That looks like the perfect loaf of bread to me. I'm afraid I have no tips to offer as I don't bake bread myself but look forward to seeing your beautiful creations!

Your loaf looks delicious Dom. It's great that you are so adventurous and willing to keep trying different breads. I've been making all of our own for the last two years, but it's exactly the same one every week – rye sourdough. I keep thinking I should experiment more – I'd like to experiment more, but its a good one and one I can cope with it whilst working, so ………

There are so many wonderful breads out there. The bread baking world seems to swear by Dan Lepard's Handmade Loaf, but I've not seen it.

DIY is the only way to go (with breadmaking, of course). And I reckon you've nailed it! Happy weekend x

I love the idea of only eating bread I've made with my own fair hands, unfortunately the practicality of this is a different thing altogether. Hubby loves homemade bread and I'd have to bake 2 loaves a day!! Your loaf looks so delicious though you may have tempted to give it a go ;0)

Good plan to make your own. Not a bad plan to eat as much of it as possible either ๐Ÿ˜‰

I've made most of my own bread for the past couple of years and do prefer it, but occasionally get caught out and either have to buy a loaf (annoying) or end up with inappropriate bread left in the freezer – black pepper rye for breakfast isn't ideal! I think I need to go back to basics and teach myself some techniques though.

You know what, I buy bread then throw most of it away uneaten. I just can't be bothered to eat it. I bet if I'd actually made the bread I would eat it all!
