Pan-Fried Sea Bass Focaccia Sandwich
Whilst I’m absolutely all about sharing Christmas food ideas, we still have to eat regular food in the run up to the big day but because this is a bonkers time of year I need something fast and delicious and this pan-fried seasbass is glorious.
It takes about 6 minutes to cook which is just enough time to mix up some yoghurt, mayo and chilli oil with brussels sprouts and fennel to make a crunchy festive slaw and then cut open the floofiest focaccia.
Then we’re just layering it up and into the gob it goes, so I can crack on with baking the mince pies.
For the fish
- 2 seabass fillets – skin on.
- Salt and pepper
- Olive oil
- Butter
- 1 lemon – cut in half
- Fresh thyme
For the slaw
- Roughly 8 brussels sprouts – finely sliced
- Half a fennel bulb – finely sliced
- 3 tablespoons Greek yoghurt
- 2 tablespoons mayo
- 1 teaspoon crunchy chilly oil (mine is from Ping at Home)
- Focaccia loaf
Season the seabass with salt and pepper on both sides. Place a large frying pan on a medium heat and add a little olive oil and butter. Once the oil gets hot place a lemon cut-side-down into the pan with some time.
Lay your seabass skin side down into the pan and cook for 4 minutes on the skin side then flip over onto the flesh side for 2 more minutes. Take the pan off the heat and remove the fish from the pan. Set aside whist you make the slaw.
Place all the ingredients into a bowl and mix well.
Spread the slaw onto both sides of the bread, lay on the seabass and sandwich the bread together.
