McDom’s Filet-O-Fish
I haven’t been in a McDonalds for years, not since I was riotously drunk after a Liza Minnelli concert back in 2011 but that’s a story for another day…
My go to order was a filet o fish. There is something uniquely sublime about breaded fried fish with cheese and tartare sauce sandwiched between fluffy white buns that is, in my humble opinion, unbeatable and has so much more flair than the common burger.
And whilst it’s unlikely I’ll venture back through the golden arches anytime soon I still want to have this perfect sandwich in my life
because as Liza so elegantly put it… life is a cabaret old chum, come join the cabaret!
For the breaded fish
- 2 cod fillets
- 150g flour – seasoned with salt and pepper
- 2 large eggs – beaten
- 100g breadcrumbs
- 50g cheddar cheese – finely grated
- Salt and pepper
- Olive oil
- 2 Soft white buns
For the tartar sauce
- 1 tablespoon Greek yoghurt
- 1 tablespoon mayo
- 1 tablespoon fresh dill – chopped
- 1 teaspoon capers
- 1 teaspoon Dijon mustard
- Salt and pepper
- The juice of half a lemon
To serve
- Salad leaves
- More finely grated cheese
Preheat the oven to 200°C (180ºC fan/400°F/Gas 6) and line a baking sheet with greaseproof paper. I’m using the Jelly Roll Pan from Nordic Ware. Drizzle a little oil over the paper.
Method:
You’ll need 3 large shallow bowls. In one, add the breadcrumns, cheese and salt and pepper and stir well.
Place the flour in another bowl.
Crack the eggs into another bowl and beat them with a fork.
Dip the cod fillets into the flour first and ensure they are fully coated. Shake off any excess and place them into the beaten egg. Turn them over a couple of times to ensure they are fully coated and then place them into the breadcrumbs. Again, turn them until they are fully coated.
Place each piece of breaded cod on the prepared pan. Drizzle a little more oil on top and bake for 20 minutes, or until the fish is cooked through and the coating is golden brown and crispy.
To make the tartare sauce, simply place the ingredients into a bowl and stir together well.
Build the burgers the moment the fish is golden and comes out of the oven. Serve on fluffy white buns with extra grated cheese and a little green lambs lettuce for crunch.
