Chocolate Pancakes
As you guys know I do a lot of walking first thing in the morning and with that, followed by rushing around, setting up my kitchen studio, cooking and filming I always try and squeeze in a good breakfast and pancakes have to be at the top of the list… and if I can enhance my breakfast with something like BetterVits Mushroom Powder Complex which allows me to easily add all kinds of goodness into the mix then I’m doubly happy!

Recipe – makes 6 pancakes
- 135g self-raising
- 2 tbsp caster sugar
- 2 tbsp BetterVits Mushroom Powder Complex
- 130ml oz milk
- 1 large egg, lightly beaten
- 2 tbsp melted salted butter, plus extra for cooking
Tip the flour, BetterVits Mushroom Powder Complex and caster sugar into a large bowl and whisk together. In a separate bowl, whisk together the milk and egg, then whisk in the melted butter.
Pour the egg mixture into the flour mixture and beat until you have a smooth batter. Allow the batter stand for a few minutes.
Heat a non-stick frying pan over a medium heat and add a knob of butter. When it’s melted, add a ladle of batter. The batter is very thick but that’s exactly what you want.
Wait for 3 minutes until the top of the pancake begins to bubble, and the edges begin to set. Flip it over and cook for another two minutes until both sides are golden brown and the pancake has risen to about 1cm thick. If the pancake is too dark, reduce the heat slightly for the next round.
Wipe the dark butter from the pan with a paper towel and repeat until all the batter is used up. You can keep the pancakes warm in a low oven, but they taste best fresh out the pan.
Serve with lashings of maple syrup, honey, Greek yoghurt and blueberries and bananas.
