random recipes #32 – the round-up

… does anyone else out there feel as though September has gone by in cloud of mystery? I have no idea what happened… here in the UK the month started cold and rainy with the onset of winter yet now it’s muggy and warm with glorious sunshine.  I was totally manic in the first half of the month managing to get all my favourite blogging challenges out the way pretty early because I knew the second half of the month was going to be a little tricky to get in front of a computer… so much so that I totally forgot to enter my own challenge!  I’ll try and squeeze it in over the weekend if I get a moment… in the meantime, in spite of at first telling you there was going to be no random recipes this month and then confusing you by creating one anyway, you lovely lot did me proud as always and came up trumps with some wonderful sweet treats to help me celebrate my birthday…

… oh and just in case you were wondering, no – the theme wasn’t apple and cinnamon!

let’s start with the delightful Choclette from the Chocolate Log Blog and these knobbly little Apple Chocolate Chip Muffins randomly selected from Seaweed and Eat It by Fiona Houston and Xa Milne

next up is Craig from The Usual Saucepans and what is quite frankly a gloriously sticky and naughty little number in the form of an Apple and Cinnamon cake taken from a family recipe book.
here’s lovely Jean from Baking in Franglais with yet more apple and cinnamon in the form of an Apple, Cranberry and Cinnamon Tart randomly selected from Easy Baking by Linda Collister
next up is random recipes virgin Cheryl from Madhouse Family Reviews and her gorgeous Bread and Butter Pudding from The Hairy Bikers Family Cookbook
and here’s Ruth from Makey-Cakey and a gift bake (although sadly and rather rudely I think, not for me) Grandma’s Date Slice taken from The Australian Women’s Weekly Picnics
next along is Jane from Onions and Paper with a not very random random recipe in an Eve’s Pudding taken very carefully from Diabetes by Azmina Govindji and Jill Myers
and now we have Alison from Dragons and Fairy Dust with a rather yummy Rice Pudding taken from Today’s Special by Anthony Demetre

here’s another rather tempting bit of naughtiness from Karen at Lavender and Lovage with a Steamed Raspberry ad Whiskey Sponge Pudding taken from the Around Britain Cookbook
next up is Ros from The More Than Occasional Baker with a wonderfully tropical Banana Nut Bread taken from British Baking by Peyton and Byrne
and here’s Mel from Sharky Oven Gloves and these almost medicinal Sticky lemon and Ginger Muffins taken from A Treasury of NZ Baking 
next is our second random recipes virgin this month so say hello to Rose from Ferns at the Balcony with her gorgeous looking Tiramisu taken from Jamie’s Italy
now this truly is something a little naughty from Claire from Under The Blue Gum Tree and a, ready for it… Chocolate Ganache with Salted Caramel, Hazelnut Crumble and Hazelnut Tuile Biscuits… phew… taken from a recipe found in Delicious Magazine
next up is Denise from Magnolia Verandah with the most wonderful story of a recipe find… her MIL Jean’s Ginger Fluff Sponge was tucked into the back of The Encyclopedia of World Cookery by Elizabeth Campbell and I feel honoured she’s shared it with us for random recipes…
of course it wouldn’t be random recipes without Lou from Please Do Not Feed The Animals and here she is for us this month with some zingy looking Lemon Bars from The Hummingbird Bakery Cookbook
and here’s the lovely Lucy from The KitchenMaid who, back from her European travels is indulging us with these yummy Butterscotch Bars taken from the Doubleday Cookbook
and finally, last but in no means least we have the comforting musings of Susan from The Spice Garden  with a Ginger Cake taken from Holday Family Favourites

    Believe me, I know exactly what you mean by the cloud of mystery. I'm still lost in it somewhere. Great selection of sweet treats here, though.

I wanted to share the pics of this salad the moment I made it cos it’s just so vibrant and summery.

Apricot & Strawberry Frangipani Pudding (recipe be Apricot & Strawberry Frangipani Pudding (recipe below)

This pudding is like a bowlful of summer. It’s light and fruity and sweet and so easy to put together.  I think it’s also quite unexpected to serve a pudding when fresh fruit is in abundance and a simple fruit salad would suffice but that’s what I adore about this.  Plus, this pudding makes very good use of those punnet’s of strawberries that look great in the supermarket but in fact taste all spongy and gloopy when you get them home.

Here’s the #recipe:

🍓 200g butter
🍓 200g golden caster sugar
🍓 3 large free-range eggs
🍓 200g ground almonds
🍓 100g strawberries – quartered
🍓 4 apricots – sliced into wedges
🍓 the finely grated zest and juice of half a lemon
🍓 2 tablespoons @fage_uk Greek Yoghurt
🍓 1 teaspoon @little_pod Vanilla Bean Paste

I greased a 20cm fluted ceramic pie dish and pre-heated the oven to 160C

beat the sugar and butter together in a large bowl until light and creamy… a stand mixer will do this in 4 minutes, a hand held electric whisk will do it in 6 minutes and a wooden spoon will do it in 8 minutes.

add the eggs and 1 tablespoon of ground almonds and beat in, then add the rest of the ground almonds and gently beat in, followed by the Greek Yoghurt, lemon zest and juice, vanilla and half the strawberries and beat in – the strawberries will become mush – which is exactly what you want.

lay half the remaining fruit into the bottom of your dish and cover with the frangipane batter, then scatter the remaining fruit on top

bake for 45 mins or until darkly golden brown, then remove from the oven and let it cool to set

Potato Kugel Traybake with Poached Eggs and Mushro Potato Kugel Traybake with Poached Eggs and Mushrooms

Is there anything more ‘Sunday Brunch’ than a crispy rosti with a delicately fragile poached egg on top? This Traybake rosti is a twist on a Jewish potato cake made with potatoes, carrots and onion. It’s amazing and really does make the perfect brunch. 

What are you having for brunch today?

for the kugel:
🍳 5 medium potatoes
🍳 2 large onions
🍳 2 large carrots – roughly grated
🍳 2 eggs – beaten
🍳 2 tablespoons flour
🍳 salt and pepper
🍳 a large handful of fresh rosemary
🍳 2 tablespoons of olive oil

for the poached eggs:
🥚 2 eggs per person
🥚 water
🥚 salt
🥚 a ramekin or similar

pre-heat the oven to 180C and butter your baking tin… i’m using an oblong swiss roll tin but any metal pan will do, a quiche or tarte tin is good.  Earthenware will work too but there’s something about the metal tin that makes it more ‘roasty’

Cut the potatoes and carrots into large chunks and par-boil till just beginning to yeald, drain and place in the fridge for one hour.  I usually do mine the night before.

Once the potatoes and carrots are cold, grate them and add them with the rest if the ingredients to a large bowl and mix together well.

Tip into your cake tin or roasting tray and roast in the oven on 190C till golden and grisp around the edges, roughly 40 mins

To make the poached eggs I prefer to use my large shallow cast-iron casserole dish.  There’s something about the cast-iron that holds the heat and cooks them evenly.  Fill the pan with water and heat it till it’s rapidly boiling, then turn down the heat until it is just steaming. 

Once it’s steadily hot with no bubbles lower the eggs into the hot water and leave them alone at this exact heat.  They should take about 5 minutes to become perfect with soft yolks but feel free to go until you like them.
