… another completely bonkers week goes by and I thought i’d reward myself a little by tailing it off with the last and I think the favourite, of my beetroot recipes…
… plus, I think I’m going to need the energy that this glorious cake will give me as tomorrow morning i’m off to Market Rasen to spend the day demo-cooking for the mobbing crowds at the Big Market which is themed Food Glorious Food. I’m a little nervous… very excited and am feeling rather proud too… I get to spend the day cooking some lovely food, provided for me by some of the best local producers… and i’ve been planning it for ages… i’m starting off with my version of a low-knead loaf – just to prove to the crowds that making your own bread can be an easy and rewarding experience… then i’m going to make a roasted and curried pumpkin and parsnip soup, served in a carved out pumpkin bowl, ready for serving at Halloween… next it will be some fun, party-sized, mini toad-in-the-holes and then i’m finishing off with, what some people may think of as a crazy choice, a chocolate and chestnut cream roulade… again to prove how easy it is to create a stunning show-stopper for the Christmas table…
… i’m actually in the kitchen now, prepping and making the stages ready for the day so that in true Blue Peter style I can say ‘and here’s one I made earlier’… and the kitchen is currently filled with the luscious aromas of baking sausages… wish me luck and do come and join me if you can make it!
as you can tell i’m a little obsessed about how brilliantly beetroot and apple work together, there’s just something so wonderful about the tartness of a crunchy cox’s orange pippin that influences the earthy depths of the beetroot… and when my neighbours delivered the massive bag of beetroots a couple of weeks ago I knew i’d be making a beetroot cake but hadn’t thought about adding the apple until I’d used the combination when I baked my chicken thighs last week… it is a brilliant combination and I urge you all to give it a go…
250g plain chocolate broken up
for the icing
100g icing sugar
100g cream cheese
beetroot juice (left over from above)
50g dark chocolate – melted
– once out of the oven and cooled you can ice to your fancy… i’ve simply used the beetroot juice beaten with some icing sugar and cream cheese to create this simple yet eye-popping icing… the melted dark chocolate adds a depth of colour to the final decoration… very little more…
I thought I was on drugs when I saw the colour of that icing!
Wow … stunning!!
Have a nice week end
Wow, what a beautiful cake! I love beetroot <3 The pink icing is absolutely stunning. I don't have a bundt tin, do you have any idea what size round / square tin you could use instead? Louise 🙂
That's an awesome looking cake! Brave of you to go with such a vibrant icing but the extra drizzle of chocolate really sets it off well!
It is well known that I don't bake (desserts that is). However, Dom, shame on you for throwing temptation my way.
So beautiful!
Such a beautiful bundt! I love the colour, this is going straight on my to bake list. x

That has to be one of the most spectacular cakes EVER! In “London 2012” colours too…
This bundt cake looks AMAZING! Love the color of the glaze. Great pictures!
Now that looks impressive! I will have to give this a go – maybe tomorrow – who could resist chocolate and pink icing – loving those beets!
Your bundt cake is fabulous and it looks like a ladies skirt from bird-eye view. Love the color of the beet root. Good luck to you and I'm sure the crowd will be awed by you.

That is the most beautiful cake I have ever seen. Have fun tomorrow.
Oh my that is an absolute beauty – I can't believe that depth of colour comes from just the beetroot juice. Nature is best. Good luck tomorrow!
OMG that has to be the most spectacular looking cake I've ever seen! I didn't manage to grow any beetroot this year but I might have to go and buy some beets just to make your cake!
you're always on drugs John…
for this recipe a 20cm springform tin would work fine… just keep an eye on the top and cover with foil if it looks like it may catch x
naturally x

Fantastic colours – very stylish, supremely tempting. Best of luck for tomorrow although, given your careful preparations, I'm sure you won't need luck.
Oh my goodness. That is all I can say. You are really getting some wonderful flavours in your recipes Dom and this is not only a great idea, it looks beautiful.
Wow, that looks fantastic. Looks like I will have to give beetroot a go after conquering carrot. This looks just the cake to inspire me! Good luck for tomorrow! 🙂 x
Love your work… That icing is absolute genius. Good luck for today! X
Look absolutely beauty!
Your recipes are always inspiring, I've never baked with beetroot, but I'm very tempted now, and what amazing colour, it's a beauty.
Have a great day, I'm sure you'll wow your audience with your fab recipes and skills.
Totally agree – spectacular cake, the icing manages to be subtle yet dramatic at the same time. It's bring pink, yet it looks right! I can imagine the taste and will be making that as soon as I can get my hands on some apples and beetroot! Good luck at your food fair – a great gig for you.
Beautiful recipe such a great idea. Good luck at the show
What an awesome colour of icing!!!
That is a beautiful looking cake Dom – I do love the way you've used chocolate to offset the purple/pink icing – very effective.
What a PRETTY cake Dom, psychedelic!

This is beautiful, I love the colour!
Dom, you have excelled yourself. That cake is a work of art. Just love that deep beetroot pink, but together with the ring and the chocolate work atop it, it's a masterpiece.
The color is out of this world. This would be perfect for Christmas or Valentines Day. Great job as usual.
This is STUNNING – a piece of modern art no less!
Absolutely gorgeous – love a bit of natural food colouring!
