potato, carrot and rosemary kugel

… September looks to be an exhausting month… i’m not complaining but sometimes I do wish I could find the ‘off’ switch and power down… or at least take a fizzy drink for the stress… I think that’s called a gin & tonic but it’s all just a ball of confusion if you ask me… and talking of confusion – isn’t it funny this British weather… and YES, I KNOW we are OBSESSED with the weather but when she’s like a scatty old aunt who can’t make her mind up, it’s hard not to be… ย today we’ll have heat and sunshine and then tomorrow I think cold and rain and then just to confuse the pants off you I think the next day we’ll go for hot and rainy… just make up your bloody mind lady… either give us a glorious Indian summer or bugger off and let it get cold and autumnal so we can get on with planning for it…

… so if we can’t have sunshine outside I thought i’d bring you a ray of sunshine inside with this potato kugel… whilst this was baking in the oven not only did The Viking keep nagging me for when it would be ready but the neighbours also popped their head in to enquire what the incredible aroma was that was wafting over the fences… always the sign of a winner in the kitchen if you ask me…

a potato kugel is traditional eastern european jewish dish originally served during festivals… it’s a very simple dish that is usually consists of just grated potato and onion but I had some carrots to use up and thought they’d make a nice addition here… it’s quite a sweet dish so serves well with lamb or beef but also works really well served with goats cheese or feta salad… my mum makes her version of kugel and serves it in slices, in place of roast potatoes with Friday night dinner or a Sunday roast… and of course it could work well with breakfast… and having made a wonderful rosti recently this is a nice twist on a similar theme…
5 medium potatoes
2 large onions – grated
2 large carrots – grated
2 eggs – beaten
2 tablespoons flour
salt and pepper
a large handful of fresh rosemary
2 tablespoons of olive oil
– cut the potatoes into large chunks and par boil till just beginning to yeald, drain and place in the fridge for one hour
– after an hour, grate the potatoes and add them with the rest if the ingredients to a large bowl and mix together well
– pour into a greased cake tin or roasting tray and roast in the oven on 190C till golden and grisp around the edges

as rosemary brings its sweet and heady aroma quite unashamedly to this dish I am entering it into my new favourite bloggers challenge Herbs on a Saturday, hosted by Karen from Lavender and Lovage

    A German friend of my mother used to make something like these but minus the rosemary – said it made meals easier. Feeding time at her house was like a pack of dogs waiting for frisbees to be thrown. Splendid stuff.

    This looks and sounds delicious. I love the twist of adding some carrot and rosemary and the fact you bake it . Kugel is such a good name too!

    I love this kind of food. I am actually going to make it for lunch in just a few minutes. I know you serve it as a side dish but I will make a meal of it with a slice of crusty bread and butter and a bit of salad. Thanks for a lovely luncheon idea!

    I'm all about crispy and the edges look like they would be delicious to rip off and munch. A green salad, a glass of white wine and this would be an excellent supper for my husband and I.

    Yes I can't wait for Autumn you had me laughing when you said fizzy drink. In my mind I was thinking “yeah I love a good soda pop too” then I read gin and tonic…LOL! : )

    Yum – very nice dish for this time of year. Autumn has defo arrived in Edinburgh … mind you I think secretly its been hanging around since last year as summer never seemed to arrive AGAIN!

    loved finding out about a new dish from you! this reminds me of the rosti, but with much less faff because you can just chuck it all into the oven. and kind of like the gratin too, but with no need to make a sauce, and with extra crispy edges. sure I'll love it!

    This looks absolutely lovely. I first thought it was a hash brown. But after reading, this sounds really tasty. I wonder if adding a cheddar into this would be worthwhile, maybe not.

    Yum-yum! But I have coeliac disease – can anyone please suggest what gluten-free flour would be best for this? I'm thinking potato flour but don't want to spoil a lovely recipe!

    Ah, so THAT's what a kugel is! And now I know what we are going to have for dinner tomorrow night, possibly with the addition of a little ham (not very kosher, I know).
    I am trying with all my might not to mention kugel exercises… and chin up, champ, it's practically October so your September horriblis will soon be a distant memory x

    Well, I didn't know what a kugel was either but I'd love some for brunch one Sunday when I can't be bothered to get up at a decent hour. I'm actually rather enjoying this slightly bizarre weather – never knowing what to expect suits me at the moment.

    Love the idea of serving this with feta or goats cheese – it looks wonderfully calming some how ๐Ÿ™‚
