pan-fried seabass

i don’t eat or cook nearly enough fish for my own good… I know Hugh has his Fish Fight, which I applaud him for, in fact, I believe my lack of fish eating and cooking goes someway to his cause… but I truly believe that if you source it responsibly and eat it less frequently, a little bit of fresh fish can be so good… as my grandma Sylvia always said ‘if it swims, it slims’…

… this uses the last of my delicious chilli vegetable stew as a base, plus i’ve got to say, with my stew already cooked, this meal took roughly 4 minutes to make… and tasted like heaven on earth!

– salt the fish, then simply pan fry the sea bass in some butter and olive oil skin side down for 1 and a half minutes until crispy, then turn over for 30 seconds… and serve…

eat and of course, enjoy!

    I am WITH your grandma there, and love her fishy saying! I DO like fish, but don't eat it enough either, and one of my favourites is sea bass, so this recipe has been saved for an evening of swimming and slimming with fish!

    hello! haha funny, I LOVE fish. I don't have it that much in london because it's admittedly more expensive, so I usually only eat sardines and mackerel. i think that's what hugh was trying to get us to do- to turn towards more sustainable options instead of just cutting fish out totally. But anyway now that i'm in SIngapore, it's seafood HEAVEN plus my mum's pampering me with lots of fish- every day, almost every meal 😉

    Four minutes–therein lies the reason to cook more fish. Oh, and they are healthy as well. There is a good movement here in the U.S. toward sustainable seafood. I was sorely disappointed not to have abalone while on a recent visit to San Francisco. Alas, it is now protected. Perhaps in the future, people will enjoy a bite.

    Thanks for the offer of shipping the “biscuits”. The Baker found them in our regular grocery store!!

    Oh dear, I misread Grandma's quote, thought she said “if it swims it slimes”. Have spent a long while trying to figure that one out, but just twigged. Oops. Lovely looking fish dish, slimy or not!

    I don't cook nearly enough fish either. I'm try at the moment to feature more fish on my blog and therefore in my kitchen too. I cooked mussels for the first time last night, a recipe from Hugh's fish fight app.

    Seabass has to be one of my favorite fish. Your recipe looks simple and delicious
