purple gooseberry and elderflower crumble ice-cream

… i think this is possibly one of the most delicious things i’ve ever made…!  i’m sure if I could package it and sell it i’d make a small fortune…

… and it’s all thanks to Sarah over at Maison Cupcake and her Forever Nigella challenge, which, this month is hosted by Arthi at Soul Curry and the theme this month is Iced Dreams. The idea is that we cook something from Nigella with an ‘iced’ theme… well, I was perusing through her ice cream recipes but nothing was inspiring i’m afraid, plus I had a bucket load of the lovely purple gooseberries that needed eating and I really wanted to cook with them… and then my hand stopped at page 250 of Nigella’s Kitchen and a recipe for Gooseberry and Elderflower Crumble and I was struck by a flash of genius… what if I deconstruct the crumble, make a vanilla custard ice-cream and then add the crumble elements to it..?…I know… pure genius!!!!!

Purple Gooseberry and Elderflower Crumble Ice Cream

as mentioned, the original recipe for the crumble can be found on page 250 of Kitchen… I simply broke it down into separate elements, stewing the fruit with the elderflower cordial, then making a crumble topping and finally a simple vanilla custard, the recipe for which can be found in Nigella’s excellent How to Eat.  I’ve let the whole lot cool and then poured the custard to my ice cream maker, followed by the gooseberries and then the crumble…

… I cannot begin to tell you how incredible this tastes… just bloody well make it!

    If I had an ice cream maker and purple gooseberries (dratted pigeons scoffed the lot) I would make this right now!

    I never come across purple gooseberry before… I can only imagine what it'd taste like. But definitely big fan of the elder.

    well thanks y'all… what can I say… genius just runs in thick streams this neck of the woods… my advice would be to all of you without an ice cream maker.. go out and get one… or… buy a plastic container and freeze the bugger!

    OMG!!!! this ice cream look so good!!!!!! If I wasn't on a constant diet I would defo go and buy an ice cream maker…but then I'll be tempted to do it everyday.. and I can't afford it!!! :-((((((

    Does look (and I'm sure taste)stupendous. Like your first comment I too had a gooseberry bush when i lived in Gotham. One day I thought to myself. Gosh they look very plump and ready for eating and intended to go out for the day and then come back in the evening to pick them. That evening I came back to a bush stripped bare and a few very fat catapillars!

    Purple gooseberries, no problem. The elderflowers might present a challenge but the finished product certainly looks worth the search–and there is the internet!!

    I would love to make this; unfortunately gooseberries are unpopular in my part of America and are impossible to find. Perhaps I should plant a bush (do they grow on bushes? I haven't the slightest idea).

    This sounds terrific and I have a friend who needs to hand off some purple gooseberries. Am I missing where you posted the actual recipe? I don't have the Nigella cookbook.
