i’m still getting through some of the items that I got sent by Sainsbury’s… and it’s well over a week since I got that delivery, which I guess just goes to show how long things can last for if you’re not too obsessive about those stupid ‘use by’ dates… not that i’d recommend anyone to flaunt the brilliant advice from the supermarkets in any way… just to use that good old common sense…
my cold, which I thought had gone and bitten the dust had actually only hidden itself under a liver or some other internal organ with a nice moist crevice for it to ferment in and now I feel almost worst than before… typical huh..?
… and you know when you feel this unwell the last thing you want to do is go shopping, so it’s lucky i’ve still got stuff left over.
so these fritters were essentially me looking in the fridge, grabbing what was there, grating it all together, binding with an egg and then frying it… so we’re all quite lucky they came out this good…
courgette and parsnip ‘grab it and grate’ fritters
2 medium courgettes – medium grated
2 medium parsnips – very finely grated
a large chunk of strong cheddar cheese – finely grated
100ml tub of cottage cheese
2 eggs – beaten
3 tablespoons flour
plenty of herbs, salt and pepper
– grate everything that can be grated, then plop it all in a big bowl and mix it up… make sure it’s not too wet, if it is, add some more flour.
– form into patties and saute in a pan until golden on each side (they will be quite floppy…)
– place onto a baking tray and bake for a further 15 minutes to firm up.
eat and of course, enjoy!

Wish I could say that I had a sure-fire method of getting over a cold, but don't. I tend to specialise in feeling sorry for myself. Nice use of leftover bits, though.
