Chicken & Chorizo All in One Stew
I want to talk about chicken thighs… they are quite frankly the tastiest part of the chicken, there are no arguments to be made otherwise. Skin on, there’s a layer of fat that makes everything that cooks with it so unbelievably tasty… combine this with chorizo as I’ve done here, along with your favourite seasonal vegetables and some creamy beans and you have the most divine, ridiculously easy to make, all in one, roast in the oven, whole house filling with the aroma of love, plate of absolute comfort food deliciousness…
This is an all-in-one roast in the oven stew that I made with vegetables that were either already in the fridge or seasonally available today. Feel free to adapt it as you like.
Recipe:
- ½ medium white onion – roughly chopped
- ½ red pepper – chopped
- ½ pointed green pepper – chopped
- ½ aubergine – chopped
- 2 chorizo sausages – cut into large slices
- 6 boneless but skin-on chicken thighs
- 250ml butter beans
- Roughly 6 large green olives – halved
- The grated zest of one lemon
- Fresh rosemary
- Salt and pepper
Pre-heat the oven to 200°C (180ºC fan/400°F/Gas 6)
Place all the veg into a roasting tin or oven-proof pan, season with salt and pepper and stir in the chorizo, olives, beans and half the lemon zest.
Lay the chicken thighs on top, skin side up. Season the top of the chicken.
Cover with foil and roast for 30 mins, then remove the foil and roast for a further 15 – 20 minutes until the chicken skin is wonderfully golden and crispy.
