Roast Fig and Feta Dip
I love figs… the deepest purple skin hiding the sweet ruby jewel-like flesh… and that aroma, there is nothing quite like it that conveys the scent of a late Mediterranean summer.
And when my dear friend Jane brought me a box of glorious figs from her garden I knew exactly what I was going to make.
I’d seen a beautiful recipe by the brilliant Uncomplicated Chef and it inspired me to make this. The figs are roasted with the feta, olive oil, honey, balsamic vinegar and oregano until wonderfully soft and jammy and then whipped up into a creamy dip in the most glorious violet colour.
And eaten with fresh bread, it was pure perfection.
Recipe:
- 500g figs – quartered
- 300g feta
- Olive oil
- 1 tablespoon Balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon dried oregano
- a handful of chopped walnuts
- Salt and pepper
You will need an ovenproof roasting tray or ceramic dish. Preheat the oven to 170C / 338F
Place the figs into an ovenproof dish and break the feta into large chunks. Add the walnuts. Drizzle with olive oil, add the honey and balsamic vinegar and season with the oregano and salt and pepper.
Bake for 25 – 35 mins or until the figs turn soft and jammy and the feta begins to colour.
Allow it to cool for 15 mins then blend well. Serve with fresh crusty bread.
