Caesar Salad in a Jar
Welcome back to my new summer series, Salad in a Jar and today we’re making my most requested salad, a chicken Caesar.
I’m starting by roasting some croutons until golden and crunchy and then I’m adding oil, mayo, Greek yoghurt and Parmesan to the jar followed by these stunning smoked anchovies, lemon juice and some fresh herbs.
I’m then layering up cos lettuce, roasted chicken pieces and those crunchy croutons… and then it’s just a matter of repeating the process until the jar is full.
Then we give it a vigorous shimmy before turning it up and over onto a bowl to reveal the Caesar Salad of dreams.
I’m using a 1 litre glass jar with a rubber seal and lock lid
Recipe:
For the croutons:
- 1/2 fresh baguette – chopped
- 2 tablespoons olive oil
- Salt and pepper
- Fresh rosemary
For the dressing:
- Olive oil
- Mayonnaise
- Greek Yogurt
- Finely grated Parmesan
- Anchovies – finely chopped to a paste
- Lemon juice
- Fresh chives
- Fresh dill
the salad:
- Cos lettuce – chopped
- roasted chicken breast – cubed
Preheat the oven to 160C / 220F
Start with the croutons.
Place them onto a baking tray and drizzle generously with olive oil and season with salt pepper and fresh rosemary. Stir well and roast for 10 mins or until golden and crispy. Set aside.
To the bottom of the jar add 2 tablespoons olive oil, one tablespoon mayo and one tablespoon Greek yogurt. Add one teaspoon of the chopped anchovies plus 2 tablespoons of the Parmesan. Now a pinch of fresh herbs and a generous squeeze of lemon juice.
Add a handful of cos lettuce, a handful of chicken pieces and a handful of croutons. Then repeat the whole thing, including the dressing ingredients in the middle, until the jar is full.
Close the lid and shake well until it’s all mixed up.
Serve by turning upside down onto a bowl or plate.
