Tomatoes & Herby Whipped Feta on Toast
We’ve all done it, come home from a holiday and tried to recreate the food we ate. Sadly, nothing really quite captures the flavours because it’s never just about the food, it’s the place, the time, the company you were with.
Having just got back from Spain I wanted to bring a little taste with me and i’ve opted for simplicity. Essentially tomatoes on toast but with a whipped feta, enriched with fresh herbs. Not messing around with it too much, just allowing the flavours to speak for themselves.
For the herby whipped feta:
- 100g feta
- 2 tablespoon Greek yogurt
- A handful of fresh oregano or marjoram
- A handful of fresh basil
- A handful of chives
- 1 tablespoon olive oil
- The juice of half a lemon
- Salt and pepper
Add everything to a mixer and blend until whipped and floofy.
For the tomatoes – remove from the fridge a good hour before using and cut them into thick slices. Lay them out onto a platter and sprinkle over some thinly sliced red onion. Season with chopped marjoram and chives as well as plenty of freshly cracked black pepper and sea salt. Drizzle generously with olive oil.
I’ve griddled sourdough with a little olive oil and then spread the whipped feta on top, followed by the tomato slices. Simple, perfection.
