Pan-Fried Sea Bass with a Celeriac & Apple Slaw

I’ve been suffering with a cold and sore throat for over a week and I needed something quick and tasty and textured to eat. Sea bass is such a fabulous fish and takes under 10 minutes to cook.
For the slaw:
- half a celeriac
- 1 small apple
- 2 tablespoons Greek yoghurt
- 1 tablespoon mayonnaise
- The juice of half a lemon
- 1 teaspoon capers
- 1 teaspoon Dijon mustard
- 3 cornichons- chopped
- 1 tablespoon fresh chopped dill
- Salt and pepper
For the sea bass:
- 2 sea bass fillets (skin on)
- 1/2 lemon
- Fresh thyme
- Salt and pepper
To make the slaw
Thinly slice and then chop the celeriac and apple into fine matchsticks. Set aside.
Place all the sauce ingredients into a bowl and stir well. Stir in the celeriac and apple until combined and covered. Set aside.
To make the sea bass:
Place a frying pan onto a high heat and add a little oil and a generous nob of butter. Season the sea bass skin with salt and pepper and lay it skin side down into the pan. Place the lemon cut side down into the pan and throw in the thyme.
Cook on the skin side for 4 minutes or until the skin is gloriously crispy. Carefully flip it over and turn off the heat. Cook for another 2 minutes in the warm pan, spooning the juices over the fish.
Serve it on some toasted sourdough with the slaw piled high on top.
