Chicken Thigh & Chorizo Traybake
Here’s a delicious and ridiculously simple one-pan traybake that is packed with flavour thanks to my favourite part of the chicken and some divine chorizo which quite frankly, makes everything taste great

ingredients:
- 1 medium red onion – roughly chopped
- 2 sticks of celery – roughly chopped
- 4 Medium Mushrooms – chopped
- 2 medium carrots – roughly chopped
- 400g small (new) potatoes – halved
- 1 teaspoon finely chopped rosemary leaves
- 1 teaspoon finely chopped thyme leaves
- 4-5 Garlic cloves – unpeeled
- 75g chorizo sausage – chopped into chunks
- 6 chicken thighs – bone in and skin on
- Salt & Pepper
Preheat the oven to 180C (fan) / 375F
You will need a large roasting dish
Place all the prepped veg into the roasting dish, season well with herbs, salt and pepper and then scatter the chorizo on top.
Lay the chicken thighs skin side down on top of the veg, season well and cover with foil and roast for 40 mins.
Remove the foil, turn the chicken thighs over and roast again for another 35-45 mins or until they are gloriously golden and the potatoes are crispy but tender.
Sprinkle with chopped coriander and serve
